Cette valeur de 5,3 % du chiffre d\u2019affaires peut \u00eatre qualifi\u00e9e de satisfaisante, et le revenu permet d&#8217;entreprendre les investissements n\u00e9cessaires dans la production et la vente. L\u2019am\u00e9lioration est due au recul des autres charges d\u2019exploitation telles que les charges locatives et les d\u00e9penses en capital.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Boulangerie-confiserie avec caf\u00e9<\/h2>\n\n\n\n<p>Pour les boulangeries-confiseries avec caf\u00e9, le cash-flow s\u2019est aussi am\u00e9lior\u00e9 constamment et il peut \u00eatre qualifi\u00e9 de bon, avec une valeur de 7,5 %. Vu les importants investissements dans les entreprises avec une partie restauration, un meilleur cash-flow est aussi n\u00e9cessaire ici, pour pouvoir supporter les amortissements additionnels concernant le caf\u00e9 et la cuisine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Boulangerie-confiserie avec marchandises<\/h2>\n\n\n\n<p>Les boulangeries-confiseries avec une grande part de marchandises restent le sujet de pr\u00e9occupation de la branche. Apr\u00e8s une l\u00e9g\u00e8re am\u00e9lioration l\u2019ann\u00e9e pr\u00e9c\u00e9dente, ce secteur a de nouveau enregistr\u00e9 un recul de 0,4 % pour se retrouver \u00e0 0,2 %. La plupart des entreprises ne peuvent donc pas se permettre les achats de remplacement dont elles ont besoin et vivent de leur substance.
