L\u2019Association suisse des patrons boulangers-confiseurs (BCS) et l\u2019Union suisse de la levure (SHV) ont d\u00e9cern\u00e9 pour la septi\u00e8me fois d\u00e9j\u00e0 le 17 juin \u00e0 Berne ce prix. Il r\u00e9compense une id\u00e9e ou une action sociale, \u00e9conomique, professionnelle ou \u00e9cologique.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pain-et-chocolat-reunis\">Pain et chocolat r\u00e9unis<\/h2>\n\n\n\n<p>Le jury a \u00e9t\u00e9 s\u00e9duit par la philosophie novatrice de l\u2019entreprise, totalement dans l\u2019air du temps, constamment appliqu\u00e9e jusque dans le moindre d\u00e9tail par les propri\u00e9taires \u00e0 succ\u00e8s. S\u00e9verin Gerber est responsable de la boulangerie, Gr\u00e9gory Wyss de la chocolaterie.<\/p>\n\n\n\n<p>Le four banal du plus vieux b\u00e2timent d\u2019Yverdon-les-Bains leur sert d\u2019alc\u00f4ve pour r\u00e9unir des clients friands de pains uniques en leur genre et de chocolat haut de gamme \u2013 l\u2019espace de vente offrant une vue imprenable sur la cuisson du pain et la fabrication du chocolat. Le tea-room est am\u00e9nag\u00e9 autour d\u2019une table conviviale au coeur du lieu historique abritant le vieux four banal.<\/p>\n\n\n\n<p>MM. Gerber et Wyss proposent des produits frais, d\u2019excellente qualit\u00e9 et de saison, \u00e0 base des meilleures mati\u00e8res premi\u00e8res de fournisseurs locaux. Ils allient parfaitement les m\u00e9thodes de fabrication traditionnelles de Suisse et de France. Tous les pains sont r\u00e9alis\u00e9s au levain naturel, avec des farines bio et locales \u2013 moulues sur meule de pierre. La boulangerie-chocolaterie Gerber Wyss S\u00e0rl a rapidement attir\u00e9 une client\u00e8le vari\u00e9e, compos\u00e9e de tous types de consommateurs. Le succ\u00e8s rencontr\u00e9 par les deux professionnels passionn\u00e9s leur a donn\u00e9 raison.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Rencontre chez Rochat<\/h2>\n\n\n\n<p>La naissance de l\u2019entreprise fait suite \u00e0 la rencontre de deux passionn\u00e9s du go\u00fbt et de beaux produits, S\u00e9verin Gerber et Gr\u00e9gory Wyss. C\u2019est au restaurant de l\u2019H\u00f4tel de ville de Crissier, travaillant sous l\u2019\u00e9gide de Philippe Rochat, qu\u2019ils ont fait connaissance. C\u2019est en 2017 qu\u2019ils ont trouv\u00e9 le courage de se lancer sur un march\u00e9 de niche en ouvrant leur propre petite entreprise dans la vieille ville d\u2019Yverdon-les-Bains, avec une offre de produits unique en son genre. La couronne boulang\u00e8re est donc l\u2019aboutissement logique de la forte amiti\u00e9 et de la passion commune des deux artisans. \u00ab Nous sommes tr\u00e8s honor\u00e9s \u00bb, s\u2019est r\u00e9joui S\u00e9verin Gerber.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trente-cinq nominations<\/h2>\n\n\n\n<p>Au total, 35 entreprises de boulangerie-confiserie ont particip\u00e9 au concours. Une d\u00e9l\u00e9gation du jury \u2013 comprenant la pr\u00e9sidente du jury Nicole Emmenegger, Daniel Daepp (SHV), Thomas Gamper (SHV), Silvan Hotz (BCS), Irene Muralt (boulangerie Muralt \u00e0 Ostermundigen) et Urs Wellauer (BCS) \u2013 s\u2019est rendue dans les entreprises pr\u00e9s\u00e9lectionn\u00e9es en vue de les \u00e9valuer.
