M\u00eame s\u2019il a aussi pris quelques chemins de traverse. \u00abDes choix qui \u00e9taient importants et justes pour moi\u00bb, estime-t-il.<\/p>\n\n\n\n<p>J\u2019ai fait mon entr\u00e9e dans le monde professionnel en devenant apprenti cuisinier \u00e0 l\u2019h\u00f4tel Schwert, \u00e0 Netstal (GL). Comme le poste dessert me plaisait, j\u2019ai d\u00e9cid\u00e9 d\u2019encha\u00eener sur un autre apprentissage, en tant que p\u00e2tissier-confiseur, au caf\u00e9-p\u00e2tisserie M\u00fcller \u00e0 N\u00e4fels (GL).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">S\u00e9jours linguistiques<\/h2>\n\n\n\n<p><br>Mon plaisir d&#8217;apprendre toujours intact, je me suis inscrit \u00e0 l\u2019\u00e9cole professionnelle d\u2019h\u00f4tellerie de Lucerne. Les personnes qui suivent la formation doivent avoir de bonnes connaissances en fran\u00e7ais et en anglais. Des s\u00e9jours \u00e0 Vancouver (CA) et \u00e0 Biarritz (F) m\u2019ont permis de r\u00e9pondre \u00e0 cette exigence. Apr\u00e8s mon apprentissage de cuisinier, j\u2019\u00e9tais exempt\u00e9 pour le premier semestre. Au cours du deuxi\u00e8me semestre, j\u2019ai pu me former au \u00abservice 1\u00d71\u00bb, \u00e0 l&#8217;\u0153nologie, etc. Mon stage pratique s\u2019est pass\u00e9 au Victoria Jungfrau, \u00e0 Interlaken (BE).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">D\u00e9part pour Hong Kong<\/h2>\n\n\n\n<p><br>Un soir, pendant le service, j\u2019ai fait la connaissance de Peter C. Borer, le PDG de la fameuse cha\u00eene d\u2019h\u00f4tellerie Peninsula. Il m&#8217;a propos\u00e9 de suivre mon stage sur le vaisseau-amiral du groupe, \u00e0 Hong Kong. Autant dire qu\u2019il n\u2019a pas eu \u00e0 me poser la question deux fois! Du coup, \u00e0 la fin de mon troisi\u00e8me semestre (Front office), je me retrouvai \u00e0 Hong Kong.<\/p>\n\n\n\n<p>J\u2019avais aussi envie de faire le stage suivant \u00e0 l\u2019\u00e9tranger: marketing sur l\u2019\u00eele de Hong Kong, dans le quartier g\u00e9n\u00e9ral mondial du groupe Peninsula. J\u2019ai ainsi v\u00e9cu au rythme fou de la m\u00e9galopole pendant plus d&#8217;un an.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Et ensuite?<\/h2>\n\n\n\n<p><br>\u00c0 la fin du dernier semestre de formation \u00e0 l\u2019\u00e9cole (direction d\u2019entreprise) et l\u2019obtention de mon dipl\u00f4me d&#8217;h\u00f4telier-restaurateur, je me suis interrog\u00e9 pour la premi\u00e8re fois sur la suite \u00e0 donner \u00e0 mon avenir professionnel. J\u2019avais le choix entre l\u2019h\u00f4tellerie, avec une offre de travail \u00e0 Chicago (\u00c9tats-Unis)\u2026 et un retour dans l\u2019entreprise de p\u00e2tisserie de mes parents, dans le canton de Glaris. Une entreprise fond\u00e9e il y a plus de 98 ans et qui a vu passer plus de trois g\u00e9n\u00e9rations de p\u00e2tissiers.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Examen professionnel et merveilleuses exp\u00e9riences<\/h2>\n\n\n\n<p><br>Au final, j\u2019ai laiss\u00e9 parler mon instinct\u2026 et de suivre mon propre chemin. Bien s\u00fbr, j\u2019ai vite r\u00e9alis\u00e9 que mon escapade dans le monde de l\u2019h\u00f4tellerie m\u2019avait fait prendre du retard sur le plan pratique. Quand deux amis d\u2019apprentissage m\u2019ont propos\u00e9 de m\u2019inscrire avec eux \u00e0 l\u2019examen professionnel de l\u2019\u00e9cole professionnelle Richemont, \u00e0 Lucerne, j\u2019ai vite dit oui. La remise \u00e0 niveau n&#8217;a pas \u00e9t\u00e9 facile. J\u2019ai cependant encore pu profiter de tr\u00e8s belles exp\u00e9riences, parmi lesquelles un stage chez le formidable chocolatier David, \u00e0 Crans Montana, et un autre chez Thierry Bamas, \u00able fou\u00bb (Meilleur Ouvrier de France, MOF), \u00e0 Anglet (F). Et j&#8217;ai nou\u00e9 des amiti\u00e9s tr\u00e8s importantes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-aux-sources-du-cacao\">Aux sources du cacao<\/h2>\n\n\n\n<p><br>Aujourd\u2019hui, je fais mes premiers pas en tant qu&#8217;expert pour la partie pratique de l\u2019examen professionnel. Je voyage r\u00e9guli\u00e8rement au Ghana, au Costa Rica et en \u00c9quateur, dans les pays d&#8217;origine du cacao. Je me suis aussi associ\u00e9 avec mes quatre fr\u00e8res, sous le nom de \u00abM\u00fcller FIVE\u00bb, pour tenter de construire l\u2019avenir de notre entreprise familiale.
