Le potentiel de chiffre d\u2019affaires de l\u2019entreprise traditionnelle \u00e0 un magasin est largement \u00e9puis\u00e9. Seule une diversification permet de g\u00e9n\u00e9rer des recettes suppl\u00e9mentaires.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-boulangerie-confiserie-avec-filiale\">Boulangerie-confiserie avec filiale<\/h2>\n\n\n\n<p>Ce type d\u2019entreprise a connu une croissance r\u00e9guli\u00e8re au cours des derni\u00e8res ann\u00e9es. Bien que le nombre de filiales soit encore plut\u00f4t modeste en termes r\u00e9els, c\u2019est ce secteur qui a enregistr\u00e9 l\u2019am\u00e9lioration la plus nette du chiffre d\u2019affaires ces deux derni\u00e8res ann\u00e9es. A la suite d\u2019une fermeture, il arrive souvent qu\u2019une entreprise ind\u00e9pendante de boulangerie-confiserie devienne une filiale d\u2019une autre entreprise et aide celle-ci \u00e0 obtenir une meilleure efficience de la production. Les petites ou les anciennes entreprises ont des difficult\u00e9s \u00e0 investir suffisamment dans une production rationnelle.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Boulangerie-confiserie avec caf\u00e9<\/h2>\n\n\n\n<p>Apr\u00e8s de l\u00e9g\u00e8res baisses dans les ann\u00e9es pr\u00e9c\u00e9dentes, le nombre des entreprises de boulangerie-confiserie avec caf\u00e9 a connu l\u2019augmentation la plus nette, en comparaison avec les autres types d\u2019entreprises. Un bon quart des entreprises sont associ\u00e9es \u00e0 un caf\u00e9. Dans ce secteur, le chiffre d\u2019affaires ne s\u2019est malheureusement pas am\u00e9lior\u00e9 dans la m\u00eame mesure. La marge insuffisante sur les produits tiers et la concurrence toujours plus grande, des grossistes et des stations-service notamment, obligent les propri\u00e9taires \u00e0 prendre de nouvelles dispositions.
