R\u00e9cit\u2026<\/strong><\/p>\n\n\n\n<p>A Goumoens-la-Ville, les villageois poss\u00e8dent leur boulangerie-p\u00e2tisserie-tea-room, depuis le 25\u202foctobre. L\u2019\u00e9tablissement est la propri\u00e9t\u00e9 de Nathalie et Cyril Bezen\u00e7on. Elle est cuisini\u00e8re, et lui boulanger. Ce projet trottait dans la t\u00eate de l\u2019enfant du village, depuis longtemps. Concept, financement, construction\u2026 Quatre ans ont \u00e9t\u00e9 n\u00e9cessaires pour le concr\u00e9tiser et transformer un champ en un immeuble compos\u00e9 d\u2019un laboratoire, d\u2019un magasin, d\u2019un tea-room de 40 places, d\u2019une terrasse de 25 places et de sept logements. \u00ab\u2009N\u2019ayant pas les fonds propres n\u00e9cessaires, il s\u2019agit d\u2019une propri\u00e9t\u00e9 par \u00e9tages. Les banques refusaient de pr\u00eater de l\u2019argent sans revenus locatifs assur\u00e9s. Nous sommes donc trois propri\u00e9taires. Avec mon \u00e9pouse, nous poss\u00e9dons la boulangerie et un appartement.\u2009\u00bb<br>Tr\u00e8s rapidement, le succ\u00e8s est au rendez-vous. La production passe de deux \u00e0 quatre personnes. \u00ab\u2009Au d\u00e9but, je voulais travailler uniquement avec ma belle-s\u0153ur p\u00e2tissi\u00e8re-confiseuse. Je pensais que dans un village de 1200 habitants, la p\u00e2tisserie n\u2019allait pas fonctionner plus que tant. En fait, ce n\u2019est pas le cas. Nos produits int\u00e9gralement faits maison plaisent et nous r\u00e9alisons une quantit\u00e9 astronomique de p\u00e2tisseries\u2009!\u2009\u00bb L\u2019entreprise a \u00e9galement lanc\u00e9 des brunchs le dimanche. Ils affichent complet plusieurs mois \u00e0 l\u2019avance.<br>A la vente et au service, Nathalie Bezen\u00e7on est responsable d\u2019une quinzaine de collaborateurs. A court terme, son objectif est de rejoindre les fourneaux afin de s\u2019occuper des menus du jour.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-de-la-folie\">\u00ab\u2009De la folie\u2009!\u2009\u00bb<\/h2>\n\n\n\n<p>Mais\u2026 A la mi-mars, le coronavirus bouleverse la success-story. \u00ab\u2009A la suite des mesures du Conseil f\u00e9d\u00e9ral, ma femme et moi \u00e9tions d\u00e9moralis\u00e9s. Nous nous sommes dit que nous allions tout perdre\u2009\u00bb, se souvient le boulanger. Les serveuses mises \u00e0 l\u2019arr\u00eat, un tournus entre les vendeuses au pourcentage s\u2019organise.<br>La premi\u00e8re semaine de \u00ab\u2009confinement\u2009\u00bb les clients sont prudents. D\u00e8s la deuxi\u00e8me, en revanche, les ventes augmentent. \u00ab\u2009C\u2019est de la folie\u2009! Nous avons bien eu 30\u202f% des ventes en plus\u2009\u00bb, commente M. Bezen\u00e7on. Les habitudes changent quelque peu\u2009: la client\u00e8le se d\u00e9place moins souvent, mais ach\u00e8te en plus grande quantit\u00e9. \u00ab\u2009Elle se fait aussi plaisir avec des douceurs. Avec les pains, ces ventes de p\u00e2tisseries compensent la baisse monumentale de viennoiseries et de sandwichs.\u2009\u00bb<br>Entre-temps, la banque demande un bouclement provisoire. \u00ab\u2009Apr\u00e8s discussion et pr\u00e9sentation de notre chiffre d\u2019affaires, notre conseiller a estim\u00e9 qu\u2019il n\u2019y avait pas beaucoup de souci \u00e0 se faire. Nous avions \u00e9galement l\u2019avantage d\u2019\u00eatre propri\u00e9taires. Nous nous sommes rassur\u00e9s mutuellement. L\u2019entreprise n\u2019\u00e9tait pas en p\u00e9ril, mais il ne fallait pas que cela dure trop longtemps tout de m\u00eame.\u2009\u00bb<br>Depuis la semaine du 11\u202fmai, le tea-room est \u00e0 nouveau ouvert. En raison des mesures barri\u00e8res, le nombre de places a diminu\u00e9 de 28 \u00e0 l\u2019int\u00e9rieur, et de 10 \u00e0 l\u2019ext\u00e9rieur. La mise sur pied d\u2019un chemin de sortie pour g\u00e9rer la circulation des acheteurs et \u00e9viter les croisements dans le magasin explique cette diminution drastique. Les tables se trouvant sur ce passage ont d\u00fb \u00eatre supprim\u00e9es. \u00ab\u2009Bien qu\u2019h\u00e9sitants au regard de toutes ses normes, il fallait ouvrir\u2009; m\u00eame si ce n\u2019est que pour quinze personnes, c\u2019est autant d\u2019individus qui ne consommaient plus chez nous.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-plaisir-plus-que-jamais-important\">\u00ab\u2009Plaisir plus que jamais important\u2009\u00bb<\/h2>\n\n\n\n<p>Au final, l\u2019entreprise devrait engranger peu de b\u00e9n\u00e9fices, mais et surtout aucune perte, selon son patron. De cette p\u00e9riode extraordinaire, Cyril Bezen\u00e7on conservera la n\u00e9cessit\u00e9 de constamment se remettre en question. \u00ab\u2009Ce covid nous a forc\u00e9s \u00e0 casser la routine. Les clients adorent d\u00e9couvrir des sp\u00e9cialit\u00e9s. Nous avons cr\u00e9\u00e9 des fl\u00fbtes \u00e0 l\u2019ail des ours cueilli par l\u2019un de mes employ\u00e9s, par exemple. Aujourd\u2019hui, nous n\u2019arrivons plus \u00e0 suivre. Le plaisir gustatif et gastronomique est plus que jamais important\u2009!\u2009\u00bb<br>Optimiste de nature, le boulanger vaudois reste confiant pour l\u2019avenir de sa maison.
