L\u2019Office f\u00e9d\u00e9ral de l\u2019agriculture (Ofag) a publi\u00e9 l\u2019enregistrement d\u00e9finitif du pain brioch\u00e9 et safran\u00e9 fribourgeois, le 3\u202fmai. Pour rappel, l\u2019Ofag avait rejet\u00e9 l\u2019unique opposition au mois de mars. L\u2019opposant pouvait recourir au Tribunal administratif f\u00e9d\u00e9ral jusqu\u2019au 27\u202favril minuit\u2009; ce qu\u2019il n\u2019a pas fait.<\/p>\n\n\n\n<p>Le nom \u00ab\u2009cuchaule\u2009\u00bb, sa recette et sa forme sont dor\u00e9navant prot\u00e9g\u00e9s. La sp\u00e9cialit\u00e9 doit \u00eatre produite sur Fribourg. Les ingr\u00e9dients, la farine, le lait, le beurre et les \u0153ufs, doivent provenir du canton. La seule exception concerne le safran. L\u2019Interprofession de la cuchaule AOP \u00e9tablira prochainement une liste de fournisseurs. En guise de signe distinctif, les brioches arboreront sur leur cro\u00fbte une pastille.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">D\u00e9lai transitoire de deux ans<\/h2>\n\n\n\n<p>Toutefois, avant que celles-ci puissent pr\u00e9tendre au titre AOP, leurs producteurs devront \u00eatre membre de l\u2019interprofession et certifi\u00e9s tous les deux ans. Le regroupement a choisi de confier le mandat \u00e0 l\u2019entreprise Procert, lors de sa r\u00e9cente assembl\u00e9e g\u00e9n\u00e9rale. \u00ab\u2009Provenance des produits, conformit\u00e9 de la recette et des temps de fermentation\u2026 Ce n\u2019est que tous les points du cahier des charges certifi\u00e9s que les producteurs pourront acheter leurs pastilles\u2009\u00bb, pr\u00e9cise Didier Ecoffey, pr\u00e9sident des artisans boulangers-confiseurs fribourgeois. Les frais de certification seront r\u00e9partis entre les entreprises \u00e0 \u00eatre contr\u00f4l\u00e9es.<\/p>\n\n\n\n<p>La mise en place de ces aspects techniques b\u00e9n\u00e9ficie d\u2019un d\u00e9lai transitoire de deux ans.
