Comment les membres de la BCS ont-ils v\u00e9cu cette premi\u00e8re phase\u2009? \u00ab\u2009panissimo\u2009\u00bb s\u2019est renseign\u00e9 aupr\u00e8s de quelques exploitations.<\/strong><\/p>\n\n\n\n<p>Le \u00ab\u2009lockdown\u2009\u00bb a \u00e9t\u00e9 d\u00e9cr\u00e9t\u00e9 \u00e0 la mi-mars par le Conseil f\u00e9d\u00e9ral. Entre autres, les \u00e9tablissements de restauration ont d\u00fb fermer, tandis que les boulangeries-p\u00e2tisseries ont pu continuer \u00e0 servir leurs clients tout en respectant les r\u00e8gles de s\u00e9curit\u00e9 et d\u2019hygi\u00e8ne. Apr\u00e8s deux mois, les caf\u00e9s et les restaurants ont \u00e9t\u00e9 autoris\u00e9s \u00e0 rouvrir le 11\u202fmai. Le Conseil f\u00e9d\u00e9ral a annonc\u00e9 cette d\u00e9cision \u00e0 tr\u00e8s br\u00e8ve \u00e9ch\u00e9ance. \u00ab\u2009panissimo\u2009\u00bb a demand\u00e9 \u00e0 certaines exploitations membres de la BCS, par le biais d\u2019un sondage par courrier \u00e9lectronique, comment elles avaient v\u00e9cu ces jours-ci.<\/p>\n\n\n\n<p>La plupart d\u2019entre elles sont heureuses d\u2019avoir retrouv\u00e9 leur pied d\u2019appui, m\u00eame si le temps de pr\u00e9paration s\u2019est montr\u00e9 plut\u00f4t mouvement\u00e9\u2009: \u00ab\u2009Ce furent des journ\u00e9es intenses. Dans un d\u00e9lai tr\u00e8s court, notre groupe de travail Corona a individualis\u00e9 le concept de protection introduit par l\u2019association. Dans le m\u00eame temps, nous avons adapt\u00e9 nos besoins en personnel, notre volume de production et nos installations de caf\u00e9. Nous avons donc organis\u00e9 et inform\u00e9 de mani\u00e8re intensive\u2009\u00bb, d\u00e9crit Katharina Barmettler-Sutter, directrice g\u00e9n\u00e9rale de Sutter AG (B\u00e2le).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-une-ouverture-denuee-de-sens\">Une ouverture d\u00e9nu\u00e9e de sens<\/h2>\n\n\n\n<p>D\u2019autres exploitations ont d\u00e9cid\u00e9 de ne pas ouvrir le caf\u00e9 ou le restaurant, malgr\u00e9 l\u2019autorisation du Conseil f\u00e9d\u00e9ral. Comme la Confiserie Schmid AG (Neuch\u00e2tel). \u00ab\u2009Nous avions compl\u00e8tement ferm\u00e9 nos installations pendant sept semaines. Comme elles sont situ\u00e9es dans le centre de Neuch\u00e2tel, au c\u0153ur de la zone pi\u00e9tonne, il n\u2019\u00e9tait pas logique de les ouvrir\u2009\u00bb, explique le directeur S\u00e9bastien Hegetschweiler, pour justifier cette d\u00e9cision. Le caf\u00e9 est \u00e9galement rest\u00e9 ferm\u00e9 \u00e0 la Confiserie Bebi\u00e9 GmbH (Lucerne). \u00ab\u2009Nous voulions une solution acceptable pour notre personnel et nos clients. Cela signifie que nous n\u2019avons rouvert le secteur du caf\u00e9 que le 6\u202fjuin\u2009\u00bb, explique la propri\u00e9taire du magasin, Yvonne Prudente-Bebi\u00e9, \u00e0 \u00ab\u2009panissimo\u2009\u00bb.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comprehensifs-et-heureux-mais-prudents\">Compr\u00e9hensifs et heureux, mais prudents<\/h2>\n\n\n\n<p>Les r\u00e9actions des clientes et des clients ont \u00e9t\u00e9 majoritairement positives et ils ont montr\u00e9 qu\u2019ils comprenaient la nouvelle situation. \u00ab\u2009A quelques exceptions pr\u00e8s, les clients ont \u00e9t\u00e9 tr\u00e8s compr\u00e9hensifs et heureux de revenir\u2009\u00bb, rapporte Mark Br\u00e4ndli, membre de la direction de la Confiserie Tea Room Br\u00e4ndli AG (Aarau). Certains membres interrog\u00e9s ont not\u00e9 un changement positif chez les consommateurs\u2009: la population est devenue plus patiente. \u00ab\u2009Nos clients sont plus aimables et plus patients qu\u2019auparavant. Ils remarquent que nous avons fait de grands efforts pour qu\u2019ils se sentent \u00e0 l\u2019aise et en s\u00e9curit\u00e9\u2009\u00bb<br>S\u00e9bastien Hegetschweiler<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-espace-d-exposition-renovation-nouveaux-produits\">Espace d\u2019exposition, r\u00e9novation, nouveaux produits<\/h2>\n\n\n\n<p>La plupart des exploitations membres interrog\u00e9es \u00e9taient litt\u00e9ralement d\u00e9bordantes de dynamisme et de force d\u2019innovation pendant la p\u00e9riode de fermeture (\u00ab\u2009panissimo\u2009\u00bb en a parl\u00e9 dans l\u2019\u00e9dition N\u00b0\u202f7\u2009\/8 du 17. avril) et ont bien profit\u00e9 de cette p\u00e9riode un peu plus calme. Ils ont d\u00e9velopp\u00e9 de nouveaux produits dans le \u00ab\u2009laboratoire de boulangerie-confiserie\u2009\u00bb, ont fait peau neuve au caf\u00e9 ou au restaurant \u2013 ils ont eu du temps pour des travaux qui passent normalement apr\u00e8s leurs activit\u00e9s quotidiennes. \u00ab\u2009Nous avons eu le temps de d\u00e9velopper de nouveaux produits, nous avons proc\u00e9d\u00e9 \u00e0 un examen critique de l\u2019exploitation dans son ensemble et nous avons cherch\u00e9 des possibilit\u00e9s d\u2019am\u00e9lioration\u2009\u00bb, explique Ivan Schmidig, de Beck Roman AG (Ibach SZ). Rolf Jeker, propri\u00e9taire de la boulangerie Jeker (B\u00fcsserach SO), a \u00e9galement proc\u00e9d\u00e9 \u00e0 une petite r\u00e9novation de son caf\u00e9.<br>Pendant la p\u00e9riode de P\u00e2ques, par exemple, la zone de caf\u00e9 inutilis\u00e9e de la Bebi\u00e9 Konditorei Confiserie GmbH (Lucerne) a \u00e9t\u00e9 transform\u00e9e en une exposition de lapins en chocolat. Apr\u00e8s deux \u00e0 trois semaines, il y a eu quelques jours o\u00f9 l\u2019affluence \u00e9tait importante, mais nous n\u2019avions pas assez de tables.\u2009\u00bb<br>Christophe Buillard<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Lutte pour la survie<\/h2>\n\n\n\n<p>Pour d\u2019autres exploitations membres, la situation \u00e9tait moins rose, elles ont lutt\u00e9 pour leur survie et faire face au flux de papiers administratifs\u2009: \u00ab\u2009Ch\u00f4mage partiel pour les 96 employ\u00e9s, cr\u00e9dit Covid, n\u00e9gociations avec le propri\u00e9taire, information constante du personnel, plan de pand\u00e9mie mis en place, planification des liquidit\u00e9s, projets tels que le \u00ab\u2009Brot-Post\u2009\u00bb enfin abord\u00e9s, etc. et d\u2019autre part, bien s\u00fbr, la r\u00e9ouverture du secteur de la restauration est d\u00e9j\u00e0 pr\u00e9vue\u2009\u00bb, d\u00e9clare Samuel Lanz, membre de la direction du Caf\u00e9 Knaus (Oensingen SO).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-evolution-rejouissante\">\u00c9volution r\u00e9jouissante<\/h2>\n\n\n\n<p>Les b\u00e9n\u00e9fices de la plupart des exploitations membres sont en hausse, m\u00eame si parfois que tr\u00e8s lentement. \u00ab\u2009Dans le commerce de d\u00e9tail, les ventes se sont d\u00e9velopp\u00e9es de mani\u00e8re satisfaisante, nous sommes revenus au niveau d\u2019avant le coronavirus. Le chiffre d\u2019affaires des caf\u00e9s fait encore d\u00e9faut, nous sommes \u00e0 environ 50\u202f% de l\u2019ann\u00e9e pr\u00e9c\u00e9dente. Les livraisons reprennent progressivement\u2009\u00bb, se r\u00e9jouit Marcel Tobler, directeur de la Zuckerb\u00e4ckerei Ermatinger AG (Schaffhouse). \u00ab\u2009Les premiers jours apr\u00e8s la r\u00e9ouverture ont \u00e9t\u00e9 tr\u00e8s faibles.
