C\u2019est aussi ma m\u00e8re qui fait le meilleur pain chez moi. Le go\u00fbt, l\u2019odeur et la consistance du m\u00e9lange de farines de Pr\u00e4ttigau, compl\u00e9t\u00e9 par de la farine d\u2019\u00e9peautre, sont tout simplement parfaits. Aujourd\u2019hui, elle fait cuire son pain dans un four \u00e9lectrique. C\u2019\u00e9tait diff\u00e9rent dans mon enfance. A Ruschein (GR) dans la r\u00e9gion de Surselva, o\u00f9 j\u2019ai grandi, la commune avait mis \u00e0 disposition un four \u00e0 bois communautaire pour le pain, construit dans les ann\u00e9es 1980.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-bruit-du-moulin-de-table-electrique\">Le bruit du moulin de table \u00e9lectrique<\/h2>\n\n\n\n<p>La veille, le four devait \u00eatre aliment\u00e9 en bois et allum\u00e9 une premi\u00e8re fois. Le jour de la cuisson, il \u00e9tait allum\u00e9 une nouvelle fois pour atteindre la temp\u00e9rature requise. Les m\u00e9nag\u00e8res s\u2019arrangeaient entre elles pour que plusieurs parties utilisent le four \u00e0 bois le m\u00eame jour ou le jour suivant. Enfant, je devais d\u2019abord p\u00e9trir la p\u00e2te de 10\u202fkg \u00e0 la main. Les p\u00e2tes, pour la plupart de trois \u00e0 quatre sortes, levaient magnifiquement. Les soirs pr\u00e9c\u00e9dents \u00e9taient rythm\u00e9s par le bruit du moulin de table \u00e9lectrique. La farine \u00e9tait moulue par ma m\u00e8re elle-m\u00eame\u2009; j\u2019ai encore aujourd\u2019hui le cliquetis du moulin dans les oreilles.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-l-enorme-ventre-du-four\">L\u2019\u00e9norme ventre du four<\/h2>\n\n\n\n<p>Le jour de la cuisson \u00e9tait parfaitement organis\u00e9. Les miches de pain \u00e9taient r\u00e9parties dans le b\u00e2timent o\u00f9 se trouvait le four \u00e0 bois. Frapper la p\u00e2te \u00e9tait particuli\u00e8rement amusant pour nous les enfants. Nous recouvrions ensuite les pains sur les planches de cuisson et les laissions lever. Ensuite, il fallait sortir le charbon avec la raclette, nettoyer le fond du four avec le \u00ab\u2009Schluvun\u2009\u00bb humide, enfourner rapidement les pains avec la pelle \u00e0 pain dans le four pour ne pas trop laisser \u00e9chapper de chaleur, et refermer rapidement la porte du four. Pour nous, les enfants, le ventre du four \u00e9tait \u00e9norme. Il d\u00e9vorait et recrachait tant de pains.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-pain-dur-n-est-pas-dur\">Le pain dur n\u2019est pas dur<\/h2>\n\n\n\n<p>Puis, c\u2019\u00e9tait la pause bien m\u00e9rit\u00e9e. Lentement, les d\u00e9licieuses odeurs du four montaient au nez. La deuxi\u00e8me fourn\u00e9e \u00e9tait consacr\u00e9e aux tresses, \u00ab\u2009Pettas Lavantadas\u2009\u00bb et aux g\u00e2teaux. La plupart du temps, le pain r\u00e9ussissait tr\u00e8s bien. Parfois mais plus rarement, ils ne levaient pas ou le four \u00e9tait trop chaud. Nous ramenions ensuite les pains fra\u00eechement cuits \u00e0 la maison avec une charrette \u00e0 bras. Ma m\u00e8re offrait toujours du pain \u00e0 droite et \u00e0 gauche de la rue. La plupart du temps, la moiti\u00e9 \u00e9tait d\u00e9j\u00e0 partie quand nous arrivions \u00e0 la maison. Les matins suivants, nous d\u00e9gustions les pains frais jusqu\u2019\u00e0 ce qu\u2019ils deviennent plus durs de jour en jour. Ma m\u00e8re disait\u2009: \u00ab\u2009Le pain dur n\u2019est pas dur\u2009; aucun pain n\u2019est dur\u2009\u00bb.<\/p>\n\n\n\n<p><strong>Maurus Blumenthal <\/strong>est directeur de l\u2019Union grisonne des arts et m\u00e9tiers.
