Quarante-neuf fabricants ont d\u00e9pos\u00e9 une demande pour un total de 163 produits. Apparence, ar\u00f4me, go\u00fbt, texture, finition\u2026<\/p>\n\n\n\n<p>Un jury de sp\u00e9cialistes et d\u2019experts sensoriels les a \u00e9valu\u00e9s. Septante sp\u00e9cialit\u00e9s ont obtenu un 5 (sur 6) et 33 un 6\u2009; une ann\u00e9e \u00e0 la qualit\u00e9 \u00ab\u2009extr\u00eamement \u00e9lev\u00e9e\u2009\u00bb, selon le pr\u00e9sident du jury et journaliste gastronomique Patrick Zbinden.<br>Des chefs et des restaurateurs ont ensuite \u00e9valu\u00e9 les produits ayant obtenu la note maximale. Il harmonise le m\u00e9lange des go\u00fbts chocolat et caf\u00e9.\u00bb<br>G\u00e9rald Saudan<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-mariage-dominicano-peruvien\">Mariage dominicano-p\u00e9ruvien<\/h2>\n\n\n\n<p>C\u2019est notamment le cas d\u2019un chocolat noir 62\u202f% de la boulangerie Saudan-Zurbuchen SA \u00e0 Fribourg. La plaque se compose de f\u00e8ves de R\u00e9publique dominicaine et de grains d\u2019arabica du P\u00e9rou bio. \u00ab\u2009Apr\u00e8s torr\u00e9faction, nous en avons fait la fabrication int\u00e9grale. Le conchage est tr\u00e8s important. Il harmonise le m\u00e9lange des go\u00fbts chocolat et caf\u00e9. Lors de la d\u00e9gustation, des notes surprenantes apparaissent entre deux types d\u2019amertume\u2009\u00bb, raconte le directeur et boulanger-confiseur G\u00e9rald Saudan.<\/p>\n\n\n\n<p>Au magasin le conchage et la confection de ces deux tablettes se font devant le public.<br><br>L\u2019artisan a \u00e9galement pr\u00e9sent\u00e9 une tablette R\u00e9publique dominicaine 64\u202f% et cristaux de sucre. Le chocolat a d\u00e9croch\u00e9 un 6, mais pas de prix sp\u00e9cial. Il pr\u00e9sente la particularit\u00e9 d\u2019\u00eatre conch\u00e9 sans le sucre qui est ensuite ajout\u00e9 au m\u00e9lange. \u00ab\u2009Lors de la fonte en bouche, les cristaux de sucre de canne brut bio apportent du croustillant et un doux go\u00fbt de m\u00e9lasse. C\u2019est un chocolat sp\u00e9cial que nous avons cr\u00e9\u00e9 pour les d\u00e9gustations et qui offre une exp\u00e9rience diff\u00e9rente.\u2009\u00bb<br>A pr\u00e9ciser qu\u2019au magasin le conchage et la confection de ces deux tablettes se font devant le public.<\/p>\n\n\n\n<p>Jusqu\u2019\u00e0 No\u00ebl, les laur\u00e9ats du label sont pr\u00e9sent\u00e9s sur<a href=\"https:\/\/www.facebook.com\/biosuisse\"> www.fb.com\/biosuisse<\/a>.
