Combien de temps les mati\u00e8res premi\u00e8res utilis\u00e9es ont-elles d\u00e9j\u00e0 voyag\u00e9 avant de se retrouver dans mon assiette sous forme de menu fini\u2009? Ce th\u00e8me occupe aujourd\u2019hui de plus en plus de couches de la population.<\/p>\n\n\n\n<p>Je suis persuad\u00e9 que la durabilit\u00e9 est \u00e9galement une question importante pour le secteur de la boulangerie-p\u00e2tisserie, les \u00ab\u2009big players\u2009\u00bb tels que Migros et Coop. Le canton d\u2019Argovie est bien positionn\u00e9 en termes de mati\u00e8res premi\u00e8res r\u00e9gionales\u2009: nous avons plusieurs moulins en Argovie. Le sucre argovien ou du moins la betterave sucri\u00e8re suisse et m\u00eame le sel sont produits en Argovie. Les \u0153ufs et les produits laitiers peuvent \u00eatre obtenus dans nombre d\u2019exploitations agricoles argoviennes.<\/p>\n\n\n\n<p>En ce qui concerne l\u2019offre, la durabilit\u00e9 est recherch\u00e9e. La mati\u00e8re premi\u00e8re qu\u2019est la farine provient essentiellement de moulins r\u00e9gionaux ou du moins suisses, les autres ingr\u00e9dients d\u00e9pendant de l\u2019offre et du prix dans le meilleur des cas \u00e9galement. L\u2019offre de produits comprend toujours quelques options r\u00e9gionales, fra\u00eeches et saines. Demandez des produits r\u00e9gionaux et durables et vous les trouverez. Si la demande est importante, l\u2019offre ne cessera de cro\u00eetre.<\/p>\n\n\n\n<p>Patrik M\u00f6sch est entrepreneur dans le secteur de l\u2019\u00e9v\u00e9nementiel et de la restauration.
