La th\u00e9matique est \u00e0 pr\u00e9sent reprise en Suisse. Le 31 octobre, \u00ab 20 Minutes\u00bb titrait \u00ab La p\u00e9nurie de beurre guette aussi la Suisse \u00bb. Quelle est la situation dans la boulangerie-confiserie \u00e0 quelques semaines de No\u00ebl ? Et, qu\u2019en est-il du prix ?<\/p>\n\n\n\n<p>Que ce soit du c\u00f4t\u00e9 de l\u2019Association des Producteurs suisses de lait (PSL) comme celui de Pistor, les d\u00e9clarations sont rassurantes. \u00ab Les stocks de beurre actuels sont effectivement tr\u00e8s bas. Au 1er octobre, les prix du lait ont augment\u00e9. Il est alors certain que, par rapport aux autres ann\u00e9es, nous ne disposons pas de montagne de beurre. Toutefois, nous supposons que l\u2019approvisionnement sera garanti de justesse jusqu\u2019\u00e0 la fin de l\u2019ann\u00e9e \u00bb, pr\u00e9cise Andrea Fischer porte-parole de Pistor.<\/p>\n\n\n\n<p>PSL a publi\u00e9 un communiqu\u00e9 de presse, le 1er novembre. Depuis des mois, elle r\u00e9clame \u00e0 l\u2019industrie et au commerce de d\u00e9tail une adaptation du prix du beurre. Par contre \u00e0 l\u2019\u00e9tranger, son prix n\u2019a jamais \u00e9t\u00e9 aussi \u00e9lev\u00e9. \u00ab Par ailleurs, les stocks de beurre en Suisse, de l\u2019ordre de 1050 tonnes actuellement, sont quasiment \u00e9puis\u00e9s. On s\u2019attend m\u00eame \u00e0 une p\u00e9nurie pour la fin de l\u2019ann\u00e9e, p\u00e9riode durant laquelle les ventes s\u2019envolent traditionnellement \u00bb, met en garde PSL. Le march\u00e9 justifierait donc une hausse des prix. \u00ab Malheureusement, selon nos observations, les prix des produits \u00e0 base de beurre n\u2019ont augment\u00e9 entre septembre et octobre 2017 que chez Coop (en moyenne +70ct\/kg) et chez Lidl (+50ct\/kg). Si tous les prestataires \u00e9levaient significativement leurs prix, il serait possible de verser 2 \u00e0 3 centimes suppl\u00e9mentaires aux producteurs, en plus de l\u2019augmentation du prix indicatif. \u00bb<\/p>\n\n\n\n<p>Cette \u00e9volution n\u2019a aucune influence importante \u00e0 court terme sur les prix de nos produits, selon Reto Fries, directeur de l\u2019\u00e9cole professionnelle Richemont. \u00ab Nous continuerons \u00e0 la surveiller et, le cas \u00e9ch\u00e9ant, nous formulerons une recommandation correspondante \u00bb, a-t-il assur\u00e9 \u00e0 \u00ab panissimo \u00bb.<\/p>\n\n\n\n<p>L\u2019Union suisse des paysans accuse les transformateurs de ne pas r\u00e9percuter cette hausse du prix du beurre chez les paysans, mais de garder l\u2019argent dans leurs poches.<\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Le beurre pourrait-il venir \u00e0 manquer dans la boulangerie-confiserie en suisse?
