Comme c\u2019\u00e9tait d\u00e9j\u00e0 le cas les ann\u00e9es pr\u00e9c\u00e9dentes, une augmentation des frais de personnel a \u00e9t\u00e9 observ\u00e9e pour l\u2019ann\u00e9e 2016. Cette derni\u00e8re est principalement due \u00e0 la nouvelle convention collective de travail qui pr\u00e9voit entre autres une cinqui\u00e8me semaine de vacances pour les employ\u00e9s qualifi\u00e9s.<\/p>\n\n\n\n<p>Ainsi, ces cinq derni\u00e8res ann\u00e9es, la hausse des frais de personnel pour les entreprises sans filiales et sans caf\u00e9 a atteint 2,2% de leur chiffre d&#8217;affaires. Sur la m\u00eame p\u00e9riode, cela repr\u00e9sente une augmentation des frais de personnel de presque 5%. Pour les entreprises disposant de filiales, la hausse est moins importante. Cela s\u2019explique par la rationalisation de la production dans des entreprises la plupart du temps sensiblement plus grandes.<\/p>\n\n\n\n<p>Pour les entreprises disposant d\u2019un caf\u00e9 ou d&#8217;un service gastronomique \u00e9galement, une hausse des frais de personnel exceptionnelle a \u00e9t\u00e9 enregistr\u00e9e ces derni\u00e8res ann\u00e9es en raison de la convention collective nationale de travail.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Comparaison intersectorielle des frais de personnel<\/h2>\n\n\n\n<p>Les conclusions expos\u00e9es plus haut incitent \u00e0 r\u00e9fl\u00e9chir, car on constate que, par rapport \u00e0 ceux des autres secteurs, les salaires des boulangers-p\u00e2tissiers ou des p\u00e2tissiers-confiseurs restent plut\u00f4t bas.
