La pand\u00e9mie du coronavirus a encore donn\u00e9 un nouvel \u00e9lan \u00e0 ces boulangers maison.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-vendre-son-propre-pain\">Vendre son propre pain\u2009?<\/h2>\n\n\n\n<p>Ce grand int\u00e9r\u00eat pour la cuisson du pain a donn\u00e9 l\u2019id\u00e9e \u00e0 de nombreux boulangers amateurs de vendre leur propre pain. Malheureusement, les limites l\u00e9gales \u00e0 ce souhait sont \u00e9lev\u00e9es, du moins en Allemagne. Des obstacles difficiles \u00e0 surmonter par de nouveaux arrivants b\u00e9n\u00e9ficiant d\u00e9j\u00e0 d\u2019un emploi r\u00e9mun\u00e9r\u00e9 et d\u2019une vie de famille.<\/p>\n\n\n\n<p>La question est de savoir si une autorisation g\u00e9n\u00e9rale accord\u00e9e aux personnes non qualifi\u00e9es de vendre leur propre pain serait pr\u00e9judiciable \u00e0 la branche de la boulangerie. Bien s\u00fbr, toutes les normes d\u2019hygi\u00e8ne devraient \u00eatre respect\u00e9es ici aussi, mais faut-il une formation compl\u00e8te pour \u00eatre autoris\u00e9 \u00e0 vendre quelques miches de pain\u2009? N\u2019est-ce pas pr\u00e9cis\u00e9ment la coexistence commerciale du professionnel et de l\u2019amateur qui enrichit la diversit\u00e9 du pain\u2009? Quel pr\u00e9judice subirait un boulanger si M. Wehrli, le voisin, vendait son pain tous les samedis\u2009? Si son pain a meilleur go\u00fbt, le probl\u00e8me serait plut\u00f4t \u00e0 chercher du c\u00f4t\u00e9 du professionnel. S\u2019il est de mauvaise qualit\u00e9, personne ne l\u2019ach\u00e8tera.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-culture-vivante-du-pain\">La culture vivante du pain<\/h2>\n\n\n\n<p>Dans des \u00ab\u2009no man\u2019s land\u2009\u00bb du pain comme les Etats-Unis ou le Japon, sans le privil\u00e8ge l\u00e9gal du m\u00e9tier appris, il s\u2019est d\u00e9velopp\u00e9 une culture du pain artisanal particuli\u00e8rement vivante dans des micro-boulangeries comme nulle part en Europe centrale. Alors pourquoi ne pas exploiter le potentiel qui sommeille chez les boulangers amateurs\u2009? Les deux parties peuvent apprendre l\u2019une de l\u2019autre.
