D\u00e9tails\u2026<\/strong><\/p>\n\n\n\n<p>A Saignel\u00e9gier (JU), le point de vente de la boulangerie-p\u00e2tisserie Parrat est ferm\u00e9, depuis le 18\u202fseptembre. Ses portes resteront closes jusqu\u2019au 20\u202fnovembre. En cause\u2009: la transformation de son magasin et tea-room.<\/p>\n\n\n\n<p>David Parrat ne pouvait toutefois pas cesser toute activit\u00e9 durant neuf semaines. Il lui fallait donc un local. D\u00e9m\u00e9nager momentan\u00e9ment son point de vente dans un autre quartier ne l\u2019enchantait pas\u2009: \u00ab\u2009Ce n\u2019est pas bon de demander aux clients de changer \u00e0 ce point leurs habitudes. En plus, cela aurait n\u00e9cessit\u00e9 un important travail de communication de notre part, uniquement pour un peu plus de deux mois.\u2009\u00bb L\u2019artisan a pr\u00e9f\u00e9r\u00e9 limiter les distances et faire installer des containers sur la place de son commerce, \u00e0 quelques pas de l\u2019entr\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-trois-mille-francs-pour-deux-mois\">Trois mille francs pour deux mois<\/h2>\n\n\n\n<p>Il s\u2019agit de deux \u00e9l\u00e9ments de 2,4 m\u00e8tres de large pour 6 de long. Il les a lou\u00e9s \u00e0 une entreprise vaudoise. Evier, radiateurs, \u00e9clairages\u2026 Ils sont enti\u00e8rement \u00e9quip\u00e9s. Un \u00e9lectricien et un sanitaire sont requis pour raccorder ces box aux r\u00e9seaux. \u00ab\u2009La location par mois du double container est de 300\u202ffrancs. Avec la livraison, l\u2019enl\u00e8vement et le montage qui repr\u00e9sentent la part la plus importante des frais, la facture s\u2019\u00e9l\u00e8vera \u00e0 environ 3000\u202ffrancs. A cela doivent s\u2019ajouter les frais de raccordement.\u2009\u00bb<\/p>\n\n\n\n<p>Pour plus de visibilit\u00e9 et capter l\u2019attention, M.\u202fParrat a habill\u00e9 ces deux modules. L\u2019enseigne des artisans boulangers-confiseurs a \u00e9t\u00e9 fix\u00e9e \u00e0 l\u2019un d\u2019eux. S\u2019y trouve aussi une b\u00e2che sur laquelle les passants peuvent lire\u2009: \u00ab\u2009Pendant les r\u00e9novations, nous vous servons ici. Pour les gourmands, c\u2019est dans la bo\u00eete\u2009!\u2009\u00bb A l\u2019int\u00e9rieur, le ma\u00eetre des lieux a profit\u00e9 d\u2019utiliser une derni\u00e8re fois le mobilier de son ancien magasin. Il sera vendu \u00e0 la fin des r\u00e9novations.<\/p>\n\n\n\n<p>Bien qu\u2019inform\u00e9s par les employ\u00e9s, via le site internet de l\u2019entreprise et les r\u00e9seaux sociaux, les clients ont tout d\u2019abord boud\u00e9 les lieux. \u00ab\u2009Les fen\u00eatres ne donnant pas sur la rue, ils avaient peut-\u00eatre l\u2019impression qu\u2019il n\u2019y avait pas de vie \u00e0 l\u2019int\u00e9rieur. Petit \u00e0 petit, ils se sont donn\u00e9 la peine d\u2019entrer. \u00ab\u2009La plupart d\u2019entre eux ont alors t\u00e9 surpris de retrouver le magasin qu\u2019ils connaissaient. Nombreux sont ceux qui demandent pourquoi nous souhaitons effectuer des transformations. Nous disposons d\u00e9j\u00e0 de tout ce qu\u2019il faut, selon eux.\u2009\u00bb<\/p>\n\n\n\n<p>Quelques craintes \u00e9manaient \u00e9galement des vendeuses. Pour y rem\u00e9dier, David Parrat a profit\u00e9 d\u2019une sortie d\u2019entreprise pour faire le point sur la phase de transition. \u00ab\u2009Cela les a un peu rassur\u00e9es. Elles ont \u00e9galement \u00e9t\u00e9 tr\u00e8s compr\u00e9hensibles quant \u00e0 la diminution de leurs heures.\u2009\u00bb La disparition momentan\u00e9e du tea-room implique in\u00e9vitablement un remaniement des temps de travail. \u00ab\u2009Au bout d\u2019une semaine, certaines d\u2019entre elles sont m\u00eame venues me proposer de les optimiser. Par exemple, elles avaient remarqu\u00e9 qu\u2019entre 15 et 16 heures, une seule vendeuse suffisait. Elles ont compris qu\u2019il y avait un impact financier, et elles nous aident.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Baisse du chiffre d\u2019affaires<\/h2>\n\n\n\n<p>D\u2019ailleurs, en ce qui concerne les affaires, le premier jour du d\u00e9m\u00e9nagement, 20\u202f% du chiffre habituel du magasin a \u00e9t\u00e9 atteint. Environ un mois plus tard, il a grimp\u00e9 \u00e0 72\u202f%. De nombreuses raisons expliquent ce manque \u00e0 gagner\u2009: un chantier qui se voit plus que le magasin, des nuisances dues aux travaux, des ventes en moins li\u00e9es \u00e0 l\u2019absence du tea-room, des gens qui n\u2019aiment pas le changement\u2026 A mi-parcours, le patron se dit un peu d\u00e9\u00e7u des chiffres qu\u2019il imaginait plus \u00e9lev\u00e9s.
