A l\u2019ordre du jour\u2009: la planification de la production, du magasin et du caf\u00e9.<\/strong><\/p>\n\n\n\n<p>\u00ab\u2009Cela fait plusieurs ann\u00e9es que nous r\u00e9fl\u00e9chissons \u00e0 la transformation de notre boulangerie\u2009\u00bb, commence \u00e0 raconter le futur patron Patrick Huber. A l\u2019origine, une r\u00e9novation du b\u00e2timent qui \u00e9tait pr\u00e9vue. Mais \u00ab\u2009en raison de la disposition peu favorable des locaux, nous avons d\u00e9cid\u00e9 en 2018 de chercher un nouvel emplacement\u2009\u00bb, ajoute Patrick Huber. D\u00e9molir et reconstruire aurait pris trop de temps et aurait \u00e9t\u00e9 trop co\u00fbteux. La famille Huber a trouv\u00e9 ce qu\u2019elle cherchait dans la Bahnhofstrasse, au centre de Widnau (SG).<\/p>\n\n\n\n<p>Outre le changement d\u2019emplacement, il y a aussi un changement de g\u00e9n\u00e9rations. Patrick Huber, l\u2019a\u00een\u00e9 des trois fr\u00e8res et confiseur-p\u00e2tissier de formation, prendra la direction de l\u2019exploitation. Daniel Huber s\u2019occupera de l\u2019aspect technique pendant la phase de construction et Dominic Huber de l\u2019administration. Daniel Huber travaille \u00e0 plein temps comme technicien en g\u00e9nie civil chez D&amp;S Baustatik GmbH \u00e0 Widnau et Dominic Huber est aussi \u00e9tudiant en gestion d\u2019exploitation et futur expert-comptable chez KPMG \u00e0 Saint-Gall. Hanspeter et Vreni Huber, qui dirigent l\u2019exploitation en troisi\u00e8me g\u00e9n\u00e9ration depuis 1993, se mettront en retrait apr\u00e8s le d\u00e9m\u00e9nagement vers le nouveau site, mais continueront \u00e0 s\u2019impliquer dans les affaires courantes et \u00e0 soutenir leurs fils dans le projet.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-transparence-et-sensibilite\">Transparence et sensibilit\u00e9<\/h2>\n\n\n\n<p>Bruno von Rotz, de Proback AG \u00e0 Rothenburg (LU), \u00e9tait pr\u00e9sent pour conseiller les Huber \u00e0 l\u2019avance sur les questions de succession. Il leur a \u00e9galement donn\u00e9 des conseils sur le nouvel emplacement. Les travaux de planification ont \u00e9t\u00e9 r\u00e9alis\u00e9s par Grogg Baumanagement GmbH. La r\u00e9ponse de Patrick Huber \u00e0 la question de savoir comment se d\u00e9roule la collaboration avec l\u2019entreprise d\u2019am\u00e9nagement de magasins est\u2009: \u00ab\u2009tr\u00e8s professionnelle\u2009\u00bb, et il poursuit\u2009: \u00ab\u2009Philipp Grogg et Gerold L\u00e4ngle se compl\u00e8tent tr\u00e8s bien. Gerold L\u00e4ngle reste toujours inform\u00e9 et intervient r\u00e9guli\u00e8rement.\u2009\u00bb<br>Les fr\u00e8res ont une vision de ce \u00e0 quoi devrait ressembler le nouvel emplacement\u2009: le caf\u00e9, qui peut accueillir une centaine de personnes, doit offrir une ambiance conviviale, mettre en valeur la qualit\u00e9 des produits de boulangerie-confiserie et pr\u00e9senter le brunch de la boulangerie. A l\u2019avenir, les clients pourront observer ce qui se passe dans la production depuis le magasin de vente. \u00ab\u2009Cela apporte de la transparence et \u00e9veille la sensibilit\u00e9 \u00e0 notre m\u00e9tier\u2009\u00bb, explique Patrick Huber. L\u2019ouverture est pr\u00e9vue pour la fin de l\u2019\u00e9t\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-plus-de-temps-pour-les-hotes\">Plus de temps pour les h\u00f4tes<\/h2>\n\n\n\n<p>Depuis novembre, le Caf\u00e9 Confiserie Huber AG travaille avec la solution globale de l\u2019entreprise HS-Soft. Elle comprend le syst\u00e8me de gestion des marchandises, le syst\u00e8me de saisie du temps et le syst\u00e8me de caisse. \u00ab\u2009Nous avons opt\u00e9 pour ce syst\u00e8me parce qu\u2019il nous permet d\u2019\u00e9valuer facilement toutes les donn\u00e9es relatives aux ventes et de proc\u00e9der aux ajustements n\u00e9cessaires\u2009\u00bb, explique Patrick Huber. Dans un premier temps, le jeune entrepreneur pr\u00e9voit de rationaliser la gamme de produits. \u00ab\u2009Nous voulons nous concentrer sur les produits qui font notre force\u2009\u00bb, explique-t-il et poursuit\u2009: \u00ab\u2009Nous allons constamment surveiller notre assortiment et l\u2019adapter aux besoins de notre client\u00e8le.\u2009\u00bbPour optimiser les op\u00e9rations, le nouveau caf\u00e9 utilisera \u00e9galement le \u00ab\u2009MobileWaiter\u2009\u00bb, un terminal de commande mobile. Il permet au personnel de service de prendre plusieurs commandes \u00e0 la suite. Les informations sont transmises directement \u00e0 la cuisine afin que les pr\u00e9paratifs puissent commencer. \u00ab\u2009Le personnel a ainsi plus de temps pour se concentrer sur les h\u00f4tes et moins d\u2019erreurs sont commises\u2009\u00bb, explique l\u2019expert saint-gallois de la branche.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-eveiller-la-curiosite-etape-par-etape\">Eveiller la curiosit\u00e9, \u00e9tape par \u00e9tape<\/h2>\n\n\n\n<p>La phase pr\u00e9paratoire est termin\u00e9e. Aujourd\u2019hui, la planification d\u00e9taill\u00e9e du projet est en cours et l\u2019apparence du magasin est port\u00e9e \u00e0 un nouveau niveau. En outre, le processus de recrutement d\u2019un nouveau g\u00e9rant ou d\u2019une nouvelle g\u00e9rante est lanc\u00e9. \u00ab\u2009Jusqu\u2019\u00e0 pr\u00e9sent, c\u2019est notre m\u00e8re qui \u00e9tait responsable des ventes\u2009\u00bb, explique Patrick Huber.<br>Pendant la p\u00e9riode du coronavirus, les trois fr\u00e8res ont lanc\u00e9 le brunch at home. \u00ab\u2009L\u2019offre de brunch est tr\u00e8s bien accueillie par nos clients et est activement utilis\u00e9e\u2009\u00bb, se r\u00e9jouit Patrick Huber. Ils veulent maintenant continuer \u00e0 d\u00e9velopper le brunch at home\u2009; dans la vall\u00e9e du Rhin, par exemple, une phase de test pour un service de livraison \u00e0 domicile est en cours.<\/p>\n\n\n\n<p>Les jeunes entrepreneurs veulent communiquer progressivement afin d\u2019\u00e9veiller la curiosit\u00e9 des gens &#8211; sur les r\u00e9seaux sociaux, avec des d\u00e9pliants d\u2019information dans le magasin et avec un reportage dans le journal local.Il est tr\u00e8s important de rester en contact avec les bonnes personnes et les bons partenaires.
