Selon le pr\u00e9sident de la FMS, de nombreux facteurs li\u00e9s \u00e0 la cha\u00eene de cr\u00e9ation de valeur font que la branche se retrouve dans une \u00absituation de sandwich\u00bb.<\/strong><\/p>\n\n\n\n<p>\u00abLa situation semble plus tendue que jamais\u00bb, a d\u00e9clar\u00e9 le pr\u00e9sident Thomas Helbling au d\u00e9but de son allocution de bienvenue \u00e0 la 28<sup>e\u00a0<\/sup>AD de la F\u00e9d\u00e9ration des meuniers suisses\u00a0(FMS) \u00e0 Bienne (BE). La r\u00e9colte a \u00e9t\u00e9 inf\u00e9rieure \u00e0 la moyenne en\u00a02023, et celle de cette ann\u00e9e s\u2019av\u00e8re <a href=\"https:\/\/swissbaker.ch\/fr\/panissimo-news\/la-pire-recolte-depuis-un-quart-de-siecle\/\">encore plus mauvaise<\/a> en termes de quantit\u00e9. A cela s&#8217;ajoutent une faible utilisation des capacit\u00e9s des moulins et l&#8217;externalisation des capacit\u00e9s de production de deux importants clients de Suisse.<\/p>\n\n\n\n<p>Les grands distributeurs constituent \u00e9galement un casse-t\u00eate: ils se sont en effet prononc\u00e9s en faveur d&#8217;une augmentation de la marge des producteurs d\u00e9but&nbsp;2024, avant que l\u2019un d\u2019entre eux n\u2019annonce, six mois plus tard, son intention de s\u2019orienter davantage vers le discount \u00e0 l&#8217;avenir. Helbling a r\u00e9sum\u00e9 la situation en ces termes: \u00abNotre branche est actuellement soumise \u00e0 une \u00e9norme pression.\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-se-presenter-en-tant-qu-association\"><strong>Se pr\u00e9senter en tant qu&#8217;association<\/strong><\/h2>\n\n\n\n<p>\u00abLes membres font face au march\u00e9 avec leurs propres plans, l&#8217;association s&#8217;engage pour de meilleures conditions cadres\u00bb, a soulign\u00e9 Helbling. Pour preuve: bien que les prix indicatifs aient rench\u00e9ri de plus de 15&nbsp;% au cours des deux derni\u00e8res ann\u00e9es, la situation difficile a pu \u00eatre communiqu\u00e9e \u00e0 la population. Les consommateurs et consommatrices ont compris qu&#8217;il fallait augmenter les prix.<\/p>\n\n\n\n<p>Mais cette empathie a faibli. De plus, il existe une diff\u00e9rence entre le prix indicatif \u00e0 l\u2019intention des producteurs et productrices de c\u00e9r\u00e9ales et le prix de mouture, a rappel\u00e9 Lorenz Hirt, directeur de la FMS: \u00abPour augmenter le prix indicatif de 1,50&nbsp;franc, le prix de mouture devrait l\u2019\u00eatre de 2&nbsp;francs.\u00bb A cela s&#8217;ajoute le fait que le poids \u00e0 l&#8217;hectolitre (poids d&#8217;un volume d\u00e9fini de grains de c\u00e9r\u00e9ales) a tendance \u00e0 diminuer. La nouvelle obligation de d\u00e9claration pour le pain et les produits de boulangerie fine vendus en vrac entrant en vigueur le 1<sup>er<\/sup>\u00a0f\u00e9vrier offre l\u2019opportunit\u00e9 d\u2019accro\u00eetre la valeur per\u00e7ue du pain suisse, en collaboration avec les secteurs de la boulangerie et de la restauration. Moyennant par exemple un cours de sommelier du pain qui pourrait profiter tant aux meuneries qu\u2019aux boulangeries, comme l&#8217;a soulign\u00e9 Urs Wellauer-Boschung, directeur de la BCS. Alain Raymond, \u00e9galement membre du comit\u00e9 et CEO du Groupe Minoterie\u00a0SA, a abond\u00e9 dans le sens de sa coll\u00e8gue. \u00abIl est \u00e9galement important d&#8217;attirer l&#8217;attention du public sur le pain suisse par le biais d&#8217;\u00e9v\u00e9nements tels que le Swiss Bakery Trophy\u00bb, a-t-il ajout\u00e9.
