Mais \u00e0 la fin de la journ\u00e9e, des pains, viennoiseries, p\u00e2tisseries restent souvent dans les rayons ou dans la vitrine. Dans l\u2019\u00e9dition <a href=\"https:\/\/www.swissbaker.ch\/fr\/news-panissimo\/themesarchives\/environnement-professionnel\/environnement-professionnel-fr\/il-y-a-toujours-un-reel-besoin-dagir\/\">\u00ab\u2009panissimo\u2009\u00bb du 11.\u20091.2019<\/a> , nous avions d\u00e9j\u00e0 parl\u00e9 de ce qui peut \u00eatre fait &#8211; ou est d\u00e9j\u00e0 fait &#8211; pour que la nourriture ne soit pas jet\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-faire-du-gaspillage-alimentaire-un-enjeu\">Faire du gaspillage alimentaire un enjeu<\/h2>\n\n\n\n<p>L\u2019une des raisons pour lesquelles il reste de la nourriture dans les boulangeries-confiseries est que les consommateurs s\u2019attendent \u00e0 trouver une large gamme de produits frais \u00e0 tout moment de la journ\u00e9e. Mais les clients sont-ils seulement conscients que cela cr\u00e9e du gaspillage alimentaire et a des cons\u00e9quences n\u00e9gatives pour les boulangeries et l\u2019environnement\u2009? Il vaut la peine d\u2019informer sur le sujet \u00e0 l\u2019aide d\u2019affiches, de d\u00e9pliants, de fiches d\u2019information ou sur le site web, dans la newsletter, afin de sensibiliser les clients et les encourager \u00e0 lutter contre le gaspillage alimentaire. Faire preuve de votre engagement en faveur de la durabilit\u00e9 est \u00e9galement un outil de marketing efficace qui vous permet de vous d\u00e9marquer.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-produits-issus-de-restes-ou-de-la-vente-dans-le-magasin\">Produits issus de restes ou de la vente dans le magasin<\/h2>\n\n\n\n<p>Une autre id\u00e9e est de confectionner des produits \u00e0 partir de restes et d\u2019attirer l\u2019attention des clients sur ces produits. Par exemple, la boulangerie-confiserie Mohn AG, qui compte huit succursales dans le canton de Thurgovie, fabrique des chips \u00e0 partir de restes de tresses. La Mohn AG travaille \u00e9galement avec Too Good To Go et vend des restes de nourriture \u00e0 prix r\u00e9duit via l\u2019application du m\u00eame nom. Autre option\u2009: distinguer les produits qui ne peuvent pas \u00eatre vendus le lendemain, les r\u00e9duire \u00e0 partir d\u2019une certaine heure ou &#8211; s\u2019ils sont encore parfaits &#8211; les vendre \u00e0 prix r\u00e9duit le lendemain.<br>L\u2019Association suisse des patrons boulangers-confiseurs et Too Good To Go collaborent plus \u00e9troitement depuis d\u00e9cembre\u202f2020 (<a href=\"https:\/\/www.swissbaker.ch\/inhalte\/07_medien\/fr\/Communique_de_presse_Un_tiers_des_boulangeries-confiseries_suisses_sauvent_de_la_nourriture_avec_Too_Good_To_Go.pdf\">Communiqu\u00e9 de presse du 1er\u202fd\u00e9cembre 2020<\/a>). \u00ab\u2009panissimo\u2009\u00bb fait donc r\u00e9guli\u00e8rement le point sur le th\u00e8me du gaspillage alimentaire et donne des conseils sur la fa\u00e7on de le r\u00e9duire.<\/p>\n\n\n\n<p><a href=\"https:\/\/toogoodtogo.ch\/de-ch\">toogoodtogo.ch<\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-reduire-de-moitie-les-pertes-alimentaires-d-ici-2030\">R\u00e9duire de moiti\u00e9 les pertes alimentaires d\u2019ici 2030<\/h2>\n\n\n\n<p>L\u2019alimentation est responsable d\u2019un peu moins d\u2019un tiers de la pollution environnementale dans notre pays, selon l\u2019office f\u00e9d\u00e9ral de l\u2019environnement (Ofev). Il existe donc un grand potentiel de r\u00e9duction des d\u00e9chets alimentaires en Suisse. Moins de d\u00e9chets alimentaires signifie une r\u00e9duction des \u00e9missions de gaz \u00e0 effet de serre et une diminution de l\u2019empreinte \u00e9cologique par personne<\/p>\n\n\n\n<p>La lutte contre le gaspillage alimentaire figure \u00e0 l\u2019agenda politique\u2009: en 2015, la Suisse a adopt\u00e9, avec plus de 190 pays, le programme de l\u2019ONU pour le d\u00e9veloppement durable. L\u2019un des objectifs est de r\u00e9duire de moiti\u00e9 les pertes alimentaires d\u2019ici \u00e0 2030. Si l\u2019objectif est atteint d\u2019ici 2030, l\u2019impact environnemental national des d\u00e9chets alimentaires caus\u00e9s par la consommation en Suisse pourrait \u00eatre r\u00e9duit de 61\u202f%, selon l\u2019Ofev. Dans ce contexte, le Conseil f\u00e9d\u00e9ral a \u00e9t\u00e9 mandat\u00e9 pour \u00e9laborer un plan d\u2019action contre le gaspillage alimentaire, qui devrait \u00eatre approuv\u00e9 \u00e0 l\u2019automne.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-loi-contre-le-gaspillage-alimentaire-en-chine\">Loi contre le gaspillage alimentaire en Chine<\/h2>\n\n\n\n<p>La Chine a officiellement adopt\u00e9 une loi contre le gaspillage alimentaire, interdisant le gaspillage alimentaire excessif et promouvant une soci\u00e9t\u00e9 \u00e9conome en ressources et respectueuse de l\u2019environnement. La loi permet par exemple aux restaurants de facturer un suppl\u00e9ment si les clients laissent des quantit\u00e9s excessives de nourriture dans leur assiette. Les vendeurs d\u2019aliments qui incitent les consommateurs \u00e0 passer des commandes excessives se verront infliger des amendes.
