Une gamme de produits \u00e9volutive, des sp\u00e9cialit\u00e9s cr\u00e9atives, des mati\u00e8res premi\u00e8res particuli\u00e8res et de saison\u2026 Telles sont les bases de la philosophie de son entreprise : Pour vos beaux yeux \u00e0 Lonay (VD).<\/strong><\/p>\n\n\n\n<p>\u00ab\u2005J\u2019ai horreur de faire deux fois la m\u00eame chose\u2005!\u2005\u00bb, l\u00e2che V\u00e9ronique Galvan, patronne de la boulangerie-confiserie-tea-room Pour vos beaux yeux \u00e0 Lonay. Ce trait de caract\u00e8re ne date pas d\u2019hier. Son apprentissage de p\u00e2tissi\u00e8re-confiseuse \u00e0 la Tour-de-Peilz (VD) termin\u00e9, la jeune femme binationale multiplie les exp\u00e9riences professionnelles en Espagne et en Suisse: Barcelone, Las Palmas, Montreux, Yverdon, Gstaad\u2026 \u00abUne fois que j\u2019avais tout vu, je m\u2019ennuyais. Il fallait que j\u2019aille voir autre chose.\u00bb<\/p>\n\n\n\n<p>Lorsqu\u2019elle fonde sa soci\u00e9t\u00e9 en 2007 avec une associ\u00e9e \u00e0 Aigle (VD), son objectif est clairement d\u00e9fini\u2005: \u00abLe challenge \u00e9tait d\u2019\u00e9viter la routine et d\u2019\u00eatre diff\u00e9rente de la concurrence; m\u00eame si dans ce m\u00e9tier, il est difficile d\u2019\u00e9chapper \u00e0 certaines t\u00e2ches r\u00e9p\u00e9titives.\u00bb Seule aux commandes de l\u2019entreprise depuis 2014, elle conserve ce but aujourd\u2019hui.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-une-part-de-surprise\">Une part de surprise<\/h2>\n\n\n\n<p><br>Sp\u00e9cialis\u00e9e dans les cocktails d\u00eenatoires, elle offre un service sp\u00e9cifique \u00e0 sa client\u00e8le. A la diff\u00e9rence de nombreux confr\u00e8res, elle ne d\u00e9taille pas ses articles de service traiteur \u00e0 l\u2019aide d\u2019une carte. Mme\u202fGalvan se renseigne sur les go\u00fbts de ses clients. Elle leur compose un assortiment, en fonction de leurs pr\u00e9f\u00e9rences et de leurs d\u00e9sirs. \u00abIls savent alors qu\u2019ils auront des mini-sandwichs, des verrines et autres finger-food. Ils sont tous en relation avec mon m\u00e9tier. Je ne vais pas m\u2019amuser \u00e0 faire un r\u00f4ti, par exemple, car je ne suis pas cuisini\u00e8re. Les clients, en revanche, n\u2019ont pas connaissance des produits dans le d\u00e9tail. Une part de surprise demeure.\u00bb<\/p>\n\n\n\n<p>Pour les mariages, elle organise des d\u00e9gustations. Mais l\u00e0 aussi, mari\u00e9s et convives recevront d\u2019autres produits que ceux pr\u00e9sent\u00e9s. Une raison \u00e0 cela\u2005: la volont\u00e9 de travailler des ingr\u00e9dients de saison li\u00e9e au temps s\u00e9parant la d\u00e9gustation de l\u2019\u00e9v\u00e9nement. \u00abEn juillet, nous disposons de tous les fruits, par contre en janvier, nous trouvons principalement des pommes, des poires et des bananes\u00bb, illustre-t-elle.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00abFaites-vous plaisir\u00bb<\/h2>\n\n\n\n<p><br>Pour les articles vendus dans son commerce, l\u2019inventivit\u00e9 est aussi de mise; y compris dans les d\u00e9cors de p\u00e2tisserie: \u00abQue c\u2019est triste, lorsque c\u2019est tout le temps pareil; lorsque la fraise est toujours du m\u00eame c\u00f4t\u00e9. Je rappelle \u00e0 mes collaborateurs qu\u2019ils doivent se faire plaisir. Nous avons un m\u00e9tier cr\u00e9atif!\u00bb Les \u00e9tals sont ainsi notamment garnis d\u2019un pain du mois et d\u2019un sandwich de la semaine.<\/p>\n\n\n\n<p>En plus d\u2019\u00eatre de saison, les mati\u00e8res premi\u00e8res utilis\u00e9es sont r\u00e9gionales, dans la mesure du possible. La trentenaire peut compter sur de nombreuses vari\u00e9t\u00e9s de fleurs comestibles et de l\u00e9gumes provenant du jardin de son papa. C\u2019est d\u2019ailleurs en utilisant des vari\u00e9t\u00e9s oubli\u00e9es qu\u2019elle a commenc\u00e9 \u00e0 se d\u00e9marquer des autres. Pour les produits carn\u00e9s, elle s\u2019approvisionne chez son oncle boucher. Tout ceci lui permet d\u2019affirmer que la quasi-int\u00e9gralit\u00e9 de ses produits est fabriqu\u00e9e sur place. \u00abLes choses qui ne le sont pas, sont\u2005: le miel, qui provient d\u2019un apiculteur, les confitures, que confectionne une connaissance et les fonds de tartelette pour le service traiteur.\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kamut et tritordeum<\/h2>\n\n\n\n<p><br>Du c\u00f4t\u00e9 des c\u00e9r\u00e9ales, les farines originales sont les bienvenues au laboratoire. \u00abMon fournisseur me rend r\u00e9guli\u00e8rement visite avec des sp\u00e9cialit\u00e9s. Il ne me propose pas des mati\u00e8res premi\u00e8res conventionnelles, car il sait que je les refuse.\u00bb Les moutures de kamut ou de tritordeum font partie des r\u00e9centes arriv\u00e9es. Concernant la seconde, c\u2019est tout d\u2019abord la couleur jaune que la c\u00e9r\u00e9ale conf\u00e8re \u00e0 la p\u00e2te qui l\u2019a attir\u00e9e. \u00abEnsuite, ses propri\u00e9t\u00e9s nutritives, et notamment sa teneur appauvrie en gluten, m\u2019ont plu. De plus en plus de gens pr\u00eatent attention \u00e0 cela. C\u2019est donc int\u00e9ressant de promouvoir ce type d\u2019articles.\u00bb Pour l\u2019\u00e9laboration de ses pains sp\u00e9ciaux, elle profite des conseils du p\u00e8re de l\u2019un de ses deux apprentis, qui cultive d\u2019anciennes c\u00e9r\u00e9ales.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Avenir: c\u00e9r\u00e9ales anciennes<\/h2>\n\n\n\n<p><br>A moyen terme, V\u00e9ronique Galvan souhaiterait d\u2019ailleurs axer sa production davantage, voire exclusivement, sur les farines anciennes. \u00abJe pourrais travailler une dizaine de farines panifiables et les d\u00e9cliner en pains, en sabl\u00e9s, en p\u00e2tes\u2026 Les clients se d\u00e9placeraient uniquement pour cela. Nombreux sont ceux qui recherchent une alimentation plus saine, plus directe, sans interm\u00e9diaires.
