Tout au long de la manifestation, des personnalit\u00e9s de la branche feront des d\u00e9monstrations dans le laboratoire et les cantons pr\u00e9senteront leurs sp\u00e9cialit\u00e9s. Le jeudi, le Swiss Bakery Trophy Academy, cr\u00e9\u00e9 \u00e0 l\u2019occasion de cette \u00e9dition anniversaire, accueillera 16\u202fclasses de toute la Suisse.<\/strong><\/p>\n\n\n\n<p>Cette ann\u00e9e, plus de 1430\u202fproduits seront tax\u00e9s au cours de la manifestation, \u00e9tablissant un nouveau record. Le pr\u00e9c\u00e9dent record remontait \u00e0 2012, avec 1403\u202fproduits inscrits. Le public pourra assister \u00e0 des d\u00e9monstrations de professionnels de renom comme Jorge Cardoso ou encore Quentin Guirao. La formation sera aussi \u00e0 l\u2019honneur avec la Finale romande et tessinoise des meilleurs jeunes boulangers-p\u00e2tissiers et la venue d\u2019autres jeunes talents dans le laboratoire. Chaque jour, une Confr\u00e9rie des chevaliers du bon pain pr\u00e9sentera un produit typique d\u2019un canton romand ou du Tessin. Le Swiss Bakery Trophy \u00e9merveillera aussi les enfants avec des ateliers d\u00e9di\u00e9s, o\u00f9 ils pourront confectionner muffins et tresses.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-swiss-bakery-trophy-academy\">Swiss Bakery Trophy Academy<\/h2>\n\n\n\n<p>A l\u2019occasion de cette \u00e9dition anniversaire, un concours sp\u00e9cial, le Swiss Bakery Trophy Academy, fera briller 16\u202fclasses de 3e\u202fann\u00e9e d\u2019apprentissage de toute la Suisse. Pendant un peu moins d\u2019une ann\u00e9e, les apprentis ont eu pour mission d\u2019imaginer et de cr\u00e9er un entremets, de taille et de composition de leur choix, qu\u2019ils pr\u00e9senteront au concours le jeudi 31\u202foctobre. Pour \u00e9laborer leurs entremets, les apprentis ont bien s\u00fbr pu compter sur leurs enseignants mais aussi sur les conseils de Naomi Wahl et Leon Krohn, chefs \u00e0 la Chocolate Academy de Zurich, et sur le soutien de Carma, partenaire exclusif du concours.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-top-jury-pour-les-apprentis\">Top jury pour les apprentis<\/h2>\n\n\n\n<p>Le jour du concours, un jury compos\u00e9 de six personnalit\u00e9s \u00e9valuera les entremets selon les m\u00eames crit\u00e8res en vigueur qu\u2019au Swiss Bakery Trophy. David Schmid, meilleur p\u00e2tissier au monde de l\u2019ann\u00e9e 2021 et vainqueur du prix Bernhard Aebersold lors du Swiss Bakery Trophy\u202f2021, Sim\u00e9on Calame, critique gastronomique au GaultMillau, Amandine Freudiger vainqueure de la Finale romande des meilleurs jeunes boulangers-p\u00e2tissiers 2021, PP Cl\u00e9ment, participant \u00e0 l\u2019\u00e9mission \u00ab\u2009Top Chef\u2009\u00bb, Alice W\u00fcthrich, m\u00e9daill\u00e9e d\u2019or au SwissSkills\u202f2023, et Valentine Lambert, participante \u00e0 l\u2019\u00e9mission \u00ab\u2009Ma recette est la meilleure de France\u2009\u00bb, composeront le jury.
