La situation est m\u00eame pire qu\u2019il y a trois ans, lorsque la r\u00e9colte avait \u00e9galement \u00e9t\u00e9 insatisfaisante, selon lui.<\/strong><\/p>\n\n\n\n<p>Les repr\u00e9sentants des moulins pr\u00e9sents ont fait \u00e9tat de pertes importantes chez les agriculteurs, de faibles poids \u00e0 l\u2019hectolitre (c\u2019est-\u00e0-dire qu\u2019il est possible d\u2019obtenir moins de farine \u00e0 partir de la m\u00eame quantit\u00e9 de c\u00e9r\u00e9ales) ainsi que de taux de mycotoxines tr\u00e8s \u00e9lev\u00e9s. En revanche, le fait que le taux de germination soit bas et que la teneur en prot\u00e9ines soit plus \u00e9lev\u00e9e est r\u00e9jouissant. Mais l\u00e0 aussi, on constate une  tendance \u00e0 la baisse au fil des ans. Les moulins devraient prendre en charge une partie des co\u00fbts suppl\u00e9mentaires, mais une partie devrait aussi pouvoir \u00eatre r\u00e9percut\u00e9e sur le march\u00e9. Les repr\u00e9sentants ont toutefois assur\u00e9 que les meuniers parviendraient \u00e0 obtenir la qualit\u00e9 souhait\u00e9e par les boulangeries.<br>En tant que repr\u00e9sentant du secteur de la boulangerie-confiserie, Manfred Hasler (Ueli der Beck,  Sch\u00f6nb\u00fchl-Urtenen, BE) a soulign\u00e9 que la limite avait \u00e9t\u00e9 atteinte et que les boulangeries-confiseries ne pouvaient plus r\u00e9percuter les augmentations de prix sur leur client\u00e8le, au risque de perdre une partie de d\u2019entre elles. La hausse des prix des mati\u00e8res premi\u00e8res n\u2019est pas la seule \u00e0 peser sur les boulangeries : l\u2019augmentation des co\u00fbts du personnel et de l\u2019\u00e9nergie est \u00e9galement un facteur aggravant, a ajout\u00e9 Urs Wellauer-Boschung, directeur de la BCS. De nombreux membres enregistrent certes des chiffres d\u2019affaires stables, mais une fr\u00e9quentation plus faible.<br><\/p>\n\n\n\n<p>Malgr\u00e9 les sujets difficiles, des points positifs ont \u00e9t\u00e9 relev\u00e9s \u00e0 la fin de la r\u00e9union.
