Les assortiments \u00e9taient nettement plus petits, ils se limitaient souvent \u00e0 du pain et des produits de boulangerie.<\/strong><\/p>\n\n\n\n<p>Cette \u00e9poque a vu l\u2019av\u00e8nement des grands distributeurs, pour qui le pain est devenu un article essentiel pour attirer les clients chaque jour, et les inciter \u00e0 acheter des produits suppl\u00e9mentaires \u00e0 forte valeur ajout\u00e9e. Ils ont commenc\u00e9 \u00e0 am\u00e9nager des boulangeries maison dans leurs filiales, pour pouvoir concurrencer les artisans en mati\u00e8re de fra\u00eecheur. De nombreuses entreprises artisanales n\u2019ont malheureusement pas r\u00e9ussi \u00e0 r\u00e9agir de mani\u00e8re ad\u00e9quate aux mutations en cours, toujours plus rapides, et \u00e0 s\u2019adapter aux exigences croissantes des clients.<\/p>\n\n\n\n<p>La pression concurrentielle n\u2019a jamais faibli depuis. Au contraire, toujours plus de prestataires se disputent les faveurs des consommateurs. En mati\u00e8re de produits frais, le commerce sp\u00e9cialis\u00e9 de boulangerie-p\u00e2tisserie-confiserie moderne est depuis longtemps devenu un acteur important. Et les nombreuses entreprises prosp\u00e8res qui pr\u00e9sentent une saine croissance et explorent m\u00eame de nouveaux canaux de vente prouvent qu\u2019il a toujours sa place. La vente, le service, le conseil et l\u2019attachement \u00e0 la r\u00e9gion resteront des arguments forts pour les clients privil\u00e9giant la qualit\u00e9, \u00e0 l\u2019avenir \u00e9galement.<\/p>\n\n\n\n<p>Markus Tscherrig a \u00e9t\u00e9 r\u00e9dacteur en chef de \u00ab\u2009panissimo\u2009\u00bb pendant 37 ans.
