Il a appris les ficelles du m\u00e9tier avec son grand-p\u00e8re, son grand-oncle et son p\u00e8re. Il a commenc\u00e9 \u00e0 mettre les pieds au laboratoire \u00e0 dix ans&nbsp;; de temps en temps les samedis pour aider son paternel. D\u00e8s lors, il a su qu\u2019il en ferait son m\u00e9tier et plus encore&nbsp;: une passion.<\/strong><\/p>\n\n\n\n<p>J\u2019ai commenc\u00e9 mon apprentissage en 2007, dans notre boulangerie familiale, dans le canton de Gen\u00e8ve. Travailler en famille n\u2019est pas toujours quelque chose de simple. Toutefois, un des plus importants avantages, c\u2019est que j\u2019ai toujours \u00e9t\u00e9 libre d\u2019exprimer ma cr\u00e9ativit\u00e9&nbsp;: en cr\u00e9ant de nouvelles viennoiseries ou des nouveaux pains, par exemple, bas\u00e9s sur des recettes vues pendant les cours. Le travail, la pers\u00e9v\u00e9rance et aussi un peu de chance m\u2019ont permis de r\u00e9ussir mon apprentissage en terminant 1er du canton, en 2010.<\/p>\n\n\n\n<p>Apr\u00e8s l\u2019apprentissage, j\u2019ai continu\u00e9 \u00e0 travailler dans notre boulangerie jusqu\u2019en octobre 2011. A cette date, je suis parti dix mois \u00e0 l\u2019arm\u00e9e en tant que cuisinier de troupe. En service long en cuisine, les Romands et les Suisses-allemands sont dans la m\u00eame section. Cela a pu cr\u00e9er quelques tensions au d\u00e9but. Au fil des semaines, nous avons appris \u00e0 nous conna\u00eetre. Nous avons remarqu\u00e9 que nous nous ressemblions beaucoup plus que nous ne pensions. Des liens ont commenc\u00e9 \u00e0 se tisser. J\u2019y ai connu un de mes meilleurs amis actuels. Et, c\u2019est gr\u00e2ce \u00e0 cette rencontre que je me trouve o\u00f9 je suis aujourd\u2019hui.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-experience-suisse-alemanique\"><strong>Exp\u00e9rience suisse al\u00e9manique<\/strong><\/h2>\n\n\n\n<p>Apr\u00e8s mon service militaire, j\u2019ai voulu d\u00e9couvrir autre chose que la boulangerie familiale, faire mes propres exp\u00e9riences et apprendre l\u2019allemand. J\u2019avais gard\u00e9 de tr\u00e8s bons contacts avec mon ami de l\u2019arm\u00e9e et je me rendais souvent \u00e0 Laufon (BL). J\u2019ai donc cherch\u00e9 du travail dans la r\u00e9gion de Laufental. M. Helfenstein m\u2019a engag\u00e9, malgr\u00e9 mon allemand m\u00e9diocre. J\u2019ai pris mon courage \u00e0 deux mains et d\u00e9m\u00e9nag\u00e9 \u00e0 R\u00f6schenz (BL). Je pensais y rester 2-3 ans puis retourner dans la r\u00e9gion genevoise. Cela fait maintenant plus de onze ans que j\u2019y suis et je ne compte pas partir de suite.<\/p>\n\n\n\n<p>Fin 2014, j\u2019ai commenc\u00e9 \u00e0 travailler dans l\u2019entreprise Kern \u00e0 Laufon, en tant que boulanger. Six ans plus tard je suis devenu \u00ab&nbsp;chef&nbsp;boulanger \u00bb, \u00e0 la suite du d\u00e9part \u00e0 la retraite de mon coll\u00e8gue.<\/p>\n\n\n\n<p>En 2020, j\u2019ai eu besoin d\u2019un nouveau challenge. Cela faisait dix ans que j\u2019avais fini mon apprentissage et je sentais que mon niveau de progression dans la branche stagnait. Je me suis donc inscrit au brevet f\u00e9d\u00e9ral. Et cela a \u00e9t\u00e9 l\u2019un des d\u00e9fis les plus compliqu\u00e9s de ma vie, mais la meilleure d\u00e9cision prise. Le brevet m\u2019a vraiment redonn\u00e9 une motivation suppl\u00e9mentaire. Il m\u2019a aussi permis de travailler sur moi-m\u00eame et de me remettre en question. Je dis toujours que faire le brevet permet de gagner dix ans d\u2019exp\u00e9riences. J\u2019encouragerai tout jeune passionn\u00e9 \u00e0 entreprendre cette \u00e9tape professionnelle.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tournant-de-la-profession\"><strong>Tournant de la profession<\/strong><\/h2>\n\n\n\n<p>En ce moment nous nous trouvons dans un tournant en ce qui concerne notre m\u00e9tier, selon moi. Le travail de nuit, le gluten, le sucre, la levure et d\u2019autres facteurs de sant\u00e9 et de nutrition sont des sujets importants \u00e0 prendre en compte pour garder notre m\u00e9tier et nos produits attractifs pour les clients et la rel\u00e8ve. Aujourd\u2019hui, il y a une valeur \u00e9thique \u00e0 consid\u00e9rer qui n\u2019est plus n\u00e9gligeable.<\/p>\n\n\n\n<p>J\u2019ai, moi-m\u00eame, toujours \u00e9t\u00e9 int\u00e9ress\u00e9 par la sant\u00e9 et la nutrition. Pendant le brevet, je me suis beaucoup int\u00e9ress\u00e9 au levain, \u00e0 ses bienfaits et aux c\u00e9r\u00e9ales anciennes. Avec l\u2019industrialisation, nous nous sommes trop \u00e9cart\u00e9s du produit de base qu\u2019est le pain. Les gens en mangent de moins en moins, alors que pendant des si\u00e8cles il a \u00e9t\u00e9 un aliment de base de notre alimentation.
