Les deux associ\u00e9s misent sur la qualit\u00e9, l\u2019accueil et la collaboration. La formule fonctionne\u2009: le chiffre d\u2019affaires a doubl\u00e9 en un an.<\/strong><\/p>\n\n\n\n<p>La boulangerie-tea-room de Troistorrents a fait peau neuve avec l\u2019arriv\u00e9e de deux Fran\u00e7ais aux commandes, l\u2019ann\u00e9e derni\u00e8re. Si ce n\u2019est au travers de quelques Paris-Brest, flans \u00e0 la vanille, Kouign-amann parfois dans les pr\u00e9sentoirs, impossible de deviner leurs origines. Cl\u00e9ment Bouteiller et Christophe Delasalle sont en Suisse depuis bient\u00f4t une d\u00e9cennie. Le premier, menuisier de m\u00e9tier, a rencontr\u00e9 le second, p\u00e2tissier, \u00e0 Leytron (VS). Celui-ci explique\u2009: \u00ab\u2009J\u2019y effectuais ma derni\u00e8re ann\u00e9e de compagnon du devoir chez Albert Michellod. Au bout de trois mois, j\u2019ai interrompu mon compagnonnage pour rester au D\u00e9lice.\u2009\u00bb Il y demeura huit ans, avant de succomber au chant des sir\u00e8nes de l\u2019ind\u00e9pendance, en 2022\u2009: un laboratoire \u00e0 Troistorrents pour vendre p\u00e2tisseries, biscuits et confitures sur les march\u00e9s.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-l-appel-de-la-commune\">L\u2019appel de la commune<\/h2>\n\n\n\n<p>Une partie de ses clients, dont la pr\u00e9sidente de la commune, ont sugg\u00e9r\u00e9 \u00e0 Christophe Delasalle de reprendre la boulangerie\u2009; difficile pour l\u2019entrepreneur d\u2019acheter, \u00e0 l\u2019aube de la trentaine. Il s\u2019est donc associ\u00e9 avec les nouveaux propri\u00e9taires. Ensemble, les associ\u00e9s se sont entour\u00e9s du service de conseils de Proback. \u00ab\u2009S\u00e9curit\u00e9 au travail, hygi\u00e8ne, comptabilit\u00e9, personnel\u2026 Cela nous a particuli\u00e8rement aid\u00e9s au d\u00e9marrage de l\u2019entreprise.\u2009\u00bb Quelques mois plus tard, n\u2019\u00e9tant pas du m\u00e9tier, les propri\u00e9taires ont pr\u00e9f\u00e9r\u00e9 sortir de la S\u00e0rl. Cl\u00e9ment Bouteiller a repris leurs parts. Delasalle, et son acolyte d\u2019ajouter. \u00ab\u2009Beaucoup avaient cependant \u00e0 c\u0153ur de savoir que tout \u00e9tait maison.\u2009\u00bb En plus d\u2019une fabrication sur place, d\u2019utilisation de mati\u00e8res premi\u00e8re locales, les deux hommes soignent la d\u00e9coration. La th\u00e9matique des vitrines change environ toutes les six semaines. \u00ab\u2009Ambiance et qualit\u00e9, c\u2019est un tout. (\u2026) Si les personnes se rendent dans un \u00e9tablissement public pour boire un caf\u00e9, c\u2019est qu\u2019il y a quelque chose de plus qu\u2019\u00e0 la maison. Ils connaissent les tenanciers ou peuvent discuter avec la vendeuse, par exemple\u2009\u00bb, justifie le p\u00e2tissier. Ce n\u2019est donc pas par hasard si au moment de composer leur \u00e9quipe, les patrons ont attach\u00e9 beaucoup d\u2019importance \u00e0 embaucher des indig\u00e8nes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-complementarite-entrepreneuriale\">Compl\u00e9mentarit\u00e9 entrepreneuriale<\/h2>\n\n\n\n<p>La m\u00eame strat\u00e9gie est adopt\u00e9e avec les fournisseurs. Ils travaillent avec les entreprises r\u00e9gionales, dans la mesure du possible. Pour accompagner leurs formules ap\u00e9ro de fin de semaine, ils collaborent avec un encaveur diff\u00e9rent chaque mois. En contrepartie, le vigneron leur prendra occasionnellement un service traiteur. Et hors de question de se cannibaliser entre commer\u00e7ants. Ainsi, durant la diffusion des matchs de l\u2019Euro sur \u00e9cran g\u00e9ant, des pizzas \u00e9taient propos\u00e9es. Elles ne provenaient pas de leur fournil, mais de la pizzeria du coin, qui se fournit en glaces\u2026 aupr\u00e8s de la Boulan\u2019Tine. \u00ab\u2009Pour faire fonctionner un village, il faut que tout le monde puisse s\u2019entendre\u2009!\u2009\u00bb, r\u00e9sume Christophe Delasalle.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pres-d-une-heure-pour-des-croissants\">Pr\u00e8s d\u2019une heure pour des croissants<\/h2>\n\n\n\n<p>Les villageois ne sont pas les seules \u00e0 franchir les portes de l\u2019\u00e9choppe. Elle attire des habitants de la plaine. \u00ab\u2009Le dimanche, une partie d\u2019entre eux n\u2019h\u00e9site pas \u00e0 rouler pendant 45\u202fminutes pour acheter des croissants.\u2009\u00bb Le commerce est situ\u00e9 sur une route menant aux stations et \u00e0 proximit\u00e9 d\u2019un parking de 200 places. Par cons\u00e9quent, de nombreux touristes y marquent une pause, \u00e9t\u00e9 comme hiver. A pr\u00e9ciser que la marchandise des deux passionn\u00e9s se retrouve aussi dans deux h\u00f4tels, un d\u00e9p\u00f4t de pain et un bar-sandwich.<\/p>\n\n\n\n<p>Pour se d\u00e9marquer, les deux comp\u00e8res proposent des articles d\u2019\u00e9picerie tels que des confitures ou encore des biscuits. A Chamoson (VS), un restaurateur sert de ces derniers avec les caf\u00e9s, en fin de repas. Il a eu l\u2019id\u00e9e de les accompagner d\u2019une carte de visite de la boulangerie. Cette initiative vaudrait le passage de gourmands \u00e0 la Boulan\u2019Tine au moins une fois par semaine. \u00ab\u2009R\u00e9cemment, des policiers avaient m\u00eame organis\u00e9 leur tourn\u00e9e de fa\u00e7on \u00e0 pouvoir venir en chercher.\u2009\u00bb En proposant ces sp\u00e9cialit\u00e9s, Christophe Delasalle y voit un potentiel salut des artisans. \u00ab\u2009Toutes ces marchandises qui se trouvent de moins en moins et qui n\u2019ont pas du tout le m\u00eame go\u00fbt dans les grandes surfaces peuvent nous sauver. A Carnaval, nous fabriquons des merveilles, par exemple\u2009; des petites choses qui nous font conna\u00eetre et nous ram\u00e8nent du monde.\u2009\u00bb<\/p>\n\n\n\n<p>En ce qui concerne l\u2019avenir, point de succursale pour les deux Chorgues d\u2019adoption\u2009: \u00ab\u2009On nous en avait propos\u00e9 une, mais nous avions refus\u00e9.
