(\u2026) Dans les concours, j\u2019ai toujours \u00e9t\u00e9 assez bien plac\u00e9, mais c\u2019est la premi\u00e8re fois que je termine en t\u00eate\u2009\u00bb, confie Nicolas Noz qui a remport\u00e9 le \u00ab\u2009Caracathon\u2009\u00bb.<\/p>\n\n\n\n<p>Pour rappel, l\u2019Association Lausanne \u00e0 table a organis\u00e9 cette manifestation durant le mois de juin. Sur inscription et moyennant une quarantaine de francs, 400 personnes ont d\u00e9gust\u00e9 les tartelettes chocolat\u00e9es de dix artisans de la capitale vaudoise. \u00ab\u2009Ces derni\u00e8res ont \u00e9t\u00e9 tr\u00e8s professionnelles. Tr\u00e8s souvent, elles venaient chercher les caracs avant de se r\u00e9unir \u00e0 plusieurs afin de les comparer et de les juger\u2009\u00bb, raconte le Carac d\u2019or, patron de Noz Chocolatier.<\/p>\n\n\n\n<p>Sa p\u00e2tisserie a donc su s\u00e9duire le plus grand nombre\u2009: une p\u00e2te sucr\u00e9e avec un soup\u00e7on de noisettes, garnie d\u2019une ganache \u00e0 base de lait, de beurre, de chocolat, et recouverte d\u2019un fondant au vert l\u00e9ger. \u00ab\u2009Ce n\u2019est rien de tr\u00e8s cr\u00e9atif. Il s\u2019agit toujours de la m\u00eame recette, apprise durant mon apprentissage\u2009\u00bb, pr\u00e9cise le boulanger-confiseur. Hormis l\u2019\u00e9quilibre et la consistance du produit, l\u2019accueil de la client\u00e8le par ses vendeuses serait l\u2019autre \u00e9l\u00e9ment d\u00e9terminant de la victoire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-facile-et-pratique\">\u00ab\u2009Facile et pratique\u2009\u00bb<\/h2>\n\n\n\n<p>Au 11 de la rue Marterey, sa boutique \u00e9coulait quotidiennement entre 16 \u00e0 18 petites soucoupes verd\u00e2tres. \u00ab\u2009C\u2019est un produit que nous avons toujours eu. De bonne conservation, facile et pratique, il n\u2019\u00e9tait pas particuli\u00e8rement mis en avant, toutefois il avait son public.\u2009\u00bb<\/p>\n\n\n\n<p>\u00ab\u2009Nous en sommes actuellement \u00e0 200 caracs confectionn\u00e9s par jour\u2009!\u2009\u00bb<\/p>\n\n\n\n<p>Mais \u00e7a, c\u2019\u00e9tait avant\u2026 Durant les d\u00e9gustations du mois de juin, les ventes ont tripl\u00e9. Les consommateurs se composaient, certes, de \u00ab\u2009caracathoniens\u2009\u00bb, mais aussi de nombreux curieux ayant eu vent du concours.
