A l\u2019occasion de cette \u00e9dition anniversaire, plusieurs nouveaut\u00e9s attendent les participants. Pr\u00e9cisions avec la cheffe de projet Caroline Vionnet\u2026<\/strong><\/p>\n\n\n\n<p>Depuis un peu plus d\u2019une quinzaine de jours, les inscriptions au Swiss Bakery Trophy sont ouvertes. La taxation nationale des produits de boulangerie-p\u00e2tisserie-confiserie se d\u00e9roulera du 30\u202foctobre au 3\u202fnovembre en Gruy\u00e8re. Pour la 10<sup>e<\/sup> \u00e9dition de l\u2019\u00e9v\u00e9nement traditionnellement organis\u00e9 dans le cadre du Salon suisse des go\u00fbts et terroirs, le comit\u00e9 d\u2019organisation a r\u00e9serv\u00e9 quelques surprises.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-releve-a-l-honneur\">La rel\u00e8ve \u00e0 l\u2019honneur<\/h2>\n\n\n\n<p>La nouveaut\u00e9 la plus marquante est la place faite \u00e0 la formation au travers du Swiss Bakery Trophy Academy. Les classes des \u00e9coles professionnelles du pays ont \u00e9t\u00e9 convi\u00e9es \u00e0 prendre part au concours. En 3<sup>e<\/sup> ann\u00e9e au moment de ce dernier, elles pr\u00e9senteront un entremets qu\u2019elles auront imagin\u00e9 et cr\u00e9\u00e9 tout au long de la 2<sup>e<\/sup> ann\u00e9e.<\/p>\n\n\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\" style=\"grid-template-columns:auto 41%\"><div class=\"wp-block-media-text__content\">\n<p class=\"has-text-color has-link-color wp-elements-83b09dbc7dd1de807724e40084ab18a3\" style=\"color:#cc9933;font-size:20px;font-style:italic;font-weight:500\">\u00ab\u2009Durant une journ\u00e9e, trois professionnels de la branche et deux consommateurs \u00e9valueront leurs cr\u00e9ations, comme \u2039\u2009les grands\u203a, donc selon les crit\u00e8res habituels.\u2009\u00bb<\/p>\n\n\n\n<p class=\"has-text-color has-link-color wp-elements-83ade5233230963f7c737fa8499c7aed\" style=\"color:#cc9933;font-size:16px\">Caroline Vionnet<\/p>\n<\/div><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" width=\"540\" height=\"538\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/07\/13_2_sbt_caroline_vionnet.gif\" alt=\"\" class=\"wp-image-81328 size-full\"\/><\/figure><\/div>\n\n\n\n<div style=\"height:27px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Ces jur\u00e9s auront 16 cr\u00e9ations \u00e0 appr\u00e9cier. Dix classes romandes, quatre al\u00e9maniques, une tessinoise et une grisonne ont en effet relev\u00e9 le d\u00e9fi\u2009; de quoi r\u00e9jouir la cheffe de projet\u2009: \u00ab\u2009Pour une premi\u00e8re \u00e9dition, c\u2019est une r\u00e9ussite\u2009!\u2009\u00bb<\/p>\n\n\n\n<p>Un troph\u00e9e r\u00e9compensera les \u00e9l\u00e8ves du dessert qui obtiendra la meilleure moyenne. Les trois premiers remporteront un cours Richemont. Durant le processus de cr\u00e9ation, l\u2019opportunit\u00e9 leur a \u00e9t\u00e9 donn\u00e9e de vivre une mise en situation du concours \u00e0 la Chocolate Academy \u00e0 Zurich. Les apprentis y ont re\u00e7u des conseils techniques de la part d\u2019un jury similaire \u00e0 la finale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-creme-des-medailles\">La cr\u00e8me des m\u00e9daill\u00e9s<\/h2>\n\n\n\n<p>Un second troph\u00e9e particulier s\u2019ajoutera aux r\u00e9compenses habituelles du Swiss Bakery Trophy\u2009: le prix du jubil\u00e9. \u00ab\u2009Chaque artisan peut inscrire dans cette cat\u00e9gorie un produit ayant d\u00e9j\u00e0 \u00e9t\u00e9 m\u00e9daill\u00e9 d\u2019or lors d\u2019une pr\u00e9c\u00e9dente \u00e9dition.\u2009\u00bb Les taxateurs passeront alors les caract\u00e9ristiques des sp\u00e9cialit\u00e9s \u00e0 la loupe\u2009: aspect, forme, surface, texture, r\u00e9action en bouche, odeur\u2026 La meilleure d\u2019entre elles remportera ce troph\u00e9e singulier.<\/p>\n\n\n\n<p>La d\u00e9coration du stand fera la part belle aux \u00e9ditions pass\u00e9es. Par ailleurs, les \u00e9l\u00e9ments qui ont contribu\u00e9 au succ\u00e8s de la manifestation au fil des ann\u00e9es seront \u00e0 nouveau de la f\u00eate\u2009: d\u00e9gustations des produits tax\u00e9s, ventes de ces derniers au profit d\u2019une association, animations\u2026 Le programme est pour l\u2019heure confidentiel. \u00ab\u2009Toutefois, souligne Mme\u202fVionnet, nous pouvons d\u2019ores et d\u00e9j\u00e0 annoncer que le laboratoire accueillera \u00e0 nouveau la Finale romande et tessinoise des meilleurs jeunes boulangers-p\u00e2tissiers.\u2009\u00bb<\/p>\n\n\n\n<p>La ou le champion romand et tessinois sera d\u00e9sign\u00e9 le dernier jour de l\u2019\u00e9v\u00e9nement lors de la remise des prix qui pr\u00e9c\u00e9dera celle des divers laur\u00e9ats de l\u2019\u00e9dition anniversaire du Swiss Bakery Trophy.<\/p>\n\n\n\n<p class=\"has-text-align-right\"><em>Johann Ruppen<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-inscriptions-ouvertes\">Inscriptions ouvertes<\/h2>\n\n\n\n<p><strong>Du 30\u202foctobre au 3\u202fnovembre, le Salon suisse des go\u00fbts et terroirs \u00e0 Bulle (FR) accueillera la 10e\u202f\u00e9dition du Swiss Bakery Trophy.
