L\u2019Ecole professionnelle Richemont soutient cet \u00e9v\u00e9nement avec son savoir-faire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ouvert-a-tous\">Ouvert \u00e0 tous<\/h2>\n\n\n\n<p>Tout le monde peut participer au concours, de l\u2019apprenti au propri\u00e9taire de l\u2019entreprise, \u00e0 condition de travailler dans une chocolaterie, une confiserie, une boulangerie affili\u00e9e \u00e0 la BCS.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-cahier-des-charges\">Cahier des charges<\/h2>\n\n\n\n<p>Un pralin\u00e9 \u00e0 base de distillat de fruit sauvage est \u00e0 cr\u00e9er dans les r\u00e8gles de l\u2019art de la confiserie et de la chocolaterie. Il est recommand\u00e9 de prendre contact avec une distillerie r\u00e9gionale. Les participants sont libres de choisir les ingr\u00e9dients restants et le type de pralin\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-creations-aromatiques-innovantes\">Cr\u00e9ations aromatiques innovantes<\/h2>\n\n\n\n<p>Les distillats de fruits sauvages sont peu utilis\u00e9s dans la boulangerie-confiserie\u2009; cela devrait changer avec le lancement de ce concours. \u00ab\u2009Les fruits sauvages se distinguent par des ar\u00f4mes forts, caract\u00e9ristiques, souvent \u00e2pres. Ils constituent pr\u00e9cis\u00e9ment la bonne base pour cr\u00e9er des pralin\u00e9s\u2009\u00bb, souligne Patrick Zbinden \u00e0 \u00ab\u2009panissimo\u2009\u00bb. \u00ab\u2009Avec l\u2019utilisation de distillats de fruits sauvages, chocolatier et confiseur peuvent se d\u00e9marquer et s\u00e9duire leur client\u00e8le gr\u00e2ce \u00e0 des cr\u00e9ations aromatiques innovantes.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-fruits-sauvages\">Les fruits sauvages<\/h2>\n\n\n\n<p>Les fruits sauvages proviennent d\u2019arbustes et d\u2019arbres aux fruits comestibles, mais qui n\u2019ont pratiquement pas \u00e9t\u00e9 cultiv\u00e9s. Ils sont pr\u00e9cieux sur le plan \u00e9cologique et se caract\u00e9risent par des ar\u00f4mes tr\u00e8s diff\u00e9rents. Il y a quelque temps, des chefs de renom les ont red\u00e9couverts. Au sein de la production de distillats, ils sont consid\u00e9r\u00e9s comme une sp\u00e9cialit\u00e9 exclusive.<br>Leur consommation \u00e9tant g\u00e9n\u00e9ralement faible, ces distillats se situent plut\u00f4t dans le segment sup\u00e9rieur du march\u00e9. Sureau, n\u00e8fle, sorbier des oiseaux, merisier, cornouiller, am\u00e9lanchier et aronia\u2026 La Suisse est un pays o\u00f9 la diversit\u00e9 des fruits sauvages transform\u00e9s par distillation est riche. Les distillats issus de fruits sauvages sont rarement mis sur la table et sont donc d\u2019autant plus r\u00e9put\u00e9s.<br>\u00ab\u2009Avec l\u2019annonce de ce concours, nous voulons motiver la branche \u00e0 \u00eatre cr\u00e9ative, courageuse et innovante\u2009\u00bb, souligne M. Zbinden, qui occupera le poste de pr\u00e9sident du jury.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prix \u00e0 gagner<\/h2>\n\n\n\n<p>Le gagnant remportera un cours de distillateur d\u2019une journ\u00e9e pour dix personnes, dans une distillerie suisse. Chaque participant fabriquera son propre produit qu\u2019il rapportera chez lui.
