Pr\u00e9sentation de sa fonction au sein du comit\u00e9 et du programme des animations pour cette ann\u00e9e.<\/strong><\/p>\n\n\n\n<p>L\u2019arriv\u00e9e de David Parrat au sein du comit\u00e9 du Swiss Bakery Trophy (SBT) s\u2019est faite suite \u00e0 un besoin de cr\u00e9er un p\u00f4le animations, \u00e0 destination des visiteurs du salon, pour mettre en lumi\u00e8re le m\u00e9tier de boulanger-p\u00e2tissier-confiseur aupr\u00e8s du public, en marge du concours. Nicolas Taillens, le responsable du SBT, s\u2019est alors tourn\u00e9 vers David Parrat. Il a \u00e9t\u00e9 tr\u00e8s motiv\u00e9 par la fonction, qu\u2019il ex\u00e9cute depuis trois \u00e9ditions\u2009: \u00ab\u2009Ce qui me pla\u00eet, c\u2019est tout d\u2019abord la relation avec les consommateurs, nous leur montrons la pratique de tous les jours dans nos labos, c\u2019est un rapport direct avec le m\u00e9tier. J\u2019aime aussi la libert\u00e9 et le c\u00f4t\u00e9 artistique de la mise en place des animations, qui est peut-\u00eatre moins carr\u00e9e que celle de l\u2019organisation du concours et des taxations. En revanche, cela apporte une autre difficult\u00e9\u2009: devoir repartir d\u2019une feuille blanche \u00e0 chaque \u00e9dition, sans pouvoir vraiment se baser sur ce qui a \u00e9t\u00e9 fait la fois pr\u00e9c\u00e9dente. Il faut de nouvelles id\u00e9es et de nouveaux invit\u00e9s, sans savoir en avance si cela va plaire aux visiteurs.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-laboratoire-bien-rempli\">Un laboratoire bien rempli<\/h2>\n\n\n\n<p>Pour cette \u00e9dition, le programme des animations est bien rempli. Il promet aux visiteurs de d\u00e9couvrir de nombreux aspects du m\u00e9tier. Dans le laboratoire professionnel, trois jours complets, du vendredi au dimanche, seront d\u00e9di\u00e9s \u00e0 la finale romande et tessinoise des meilleurs jeunes boulangers-p\u00e2tissiers, avec cinq participants confirm\u00e9s. Durant les autres cr\u00e9neaux horaires, le but sera de montrer les gestes quotidiens des boulangers-confiseurs aux visiteurs, afin qu\u2019ils puissent les d\u00e9couvrir, puis repartir avec une recette facile \u00e0 reproduire chez eux\u2009: \u00ab\u2009Dans les intervenants d\u00e9j\u00e0 confirm\u00e9s, il y aura par exemple Richard Uldry qui fera une d\u00e9monstration de chocolat, Olivier Hofmann de produits de boulangerie, Pascal Cl\u00e9ment, vainqueur du Prix Confiserie au SBT 2018 avec sa fameuse recette de tuiles, ou encore la Boulangerie Marius, vainqueur du Swiss Finger Food Trophy en 2019, qui fera une d\u00e9monstration de snacks et petits fours ap\u00e9ritifs. Et, \u00e0 ne pas manquer, le pr\u00e9sident de l\u2019association suisse, Silvan Hotz, et celui de l\u2019association romande, Didier Ecoffey, feront une d\u00e9monstration de leurs produits f\u00e9tiches le vendredi soir.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-ateliers-pour-les-enfants\">Des ateliers pour les enfants<\/h2>\n\n\n\n<p>En dehors du laboratoire, le SBT collabore aussi avec le stand \u00ab\u2009Amuse-Bouche\u2009\u00bb du salon. Chaque jour, un atelier sera propos\u00e9 aux enfants pour fabriquer un sandwich. Une collaboration entre le SBT et Viande Suisse, autre invit\u00e9 d\u2019honneur. Trois fois par jour, le public sera aussi convi\u00e9 \u00e0 participer \u00e0 une taxation fictive men\u00e9e par les Chevaliers du bon pain. Enfin, le lundi matin, les enfants pourront participer \u00e0 un atelier de fabrication de tresse.<br>Quant \u00e0 la remise des prix du lundi apr\u00e8s-midi, une nouveaut\u00e9 est \u00e0 attendre cette ann\u00e9e\u2009: \u00ab\u2009Pour la premi\u00e8re fois, et apr\u00e8s la demande des participants al\u00e9maniques, elle sera pr\u00e9sent\u00e9e en bilingue. S\u00e9bastien Rey l\u2019animera en fran\u00e7ais et Claudia Vernocchi en allemand.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-inscriptions-prolongees\">Inscriptions prolong\u00e9es<\/h2>\n\n\n\n<p>Le d\u00e9lai officiel d\u2019inscription au Swiss Bakery Trophy (SBT) est fix\u00e9 \u00e0 ce jour, jeudi 30\u202fseptembre. Il sera cependant toujours possible aux artisans boulangers-p\u00e2tissiers-confiseurs d\u2019inscrire leurs sp\u00e9cialit\u00e9s au-del\u00e0 de cette date sur swissbakerytrophy.ch\/inscription.
