Un schnaps d\u00e9fectueux r\u00e9sulte de l\u2019utilisation pour la distillation de baies, d\u2019exc\u00e9dents de fruits, de fruits non m\u00fbrs, trop m\u00fbrs ou pourris, ou de marcs avari\u00e9s provenant de la vinification ou de la cidrerie.<\/p>\n\n\n\n<p>En mati\u00e8re de schnaps, les d\u00e9fauts sont souvent dus \u00e0 une mauvaise fermentation de la mati\u00e8re premi\u00e8re. Outre l\u2019acide lactique et l\u2019acide butyrique, l\u2019acide ac\u00e9tique peut notamment \u00e9galement induire une odeur de vinaigre finalement perceptible dans le distillat. L\u2019acide ac\u00e9tique peut par ailleurs g\u00e9n\u00e9rer la formation d\u2019\u00e9ther (\u00e9thylac\u00e9tique) ind\u00e9sirable, olfactivement reconnaissable dans le distillat sous forme de dissolvant pour vernis \u00e0 ongles ou de colle (c\u00e9mentite).<\/p>\n\n\n\n<p>Le schnaps de qualit\u00e9 irr\u00e9prochable est compos\u00e9 d\u2019une grande proportion d\u2019\u00e9thanol et d\u2019ester de fruit, avec le moins possible de t\u00eate de distillation r\u00e9sultant du d\u00e9but du processus de distillation. Il ne devrait pas y avoir de queue de distillation se formant vers la fin de la distillation, une tr\u00e8s petite concentration \u00e9tant possible le cas \u00e9ch\u00e9ant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-principaux-criteres-de-qualite\">Les principaux crit\u00e8res de qualit\u00e9<\/h2>\n\n\n\n<p>L\u2019un des crit\u00e8res de qualit\u00e9 importants des distillats (monovari\u00e9taux) distill\u00e9s \u00e0 partir de fruits (sauvages), baies et autres mati\u00e8res premi\u00e8res est leur ar\u00f4me caract\u00e9ristique, qui ne peut souvent \u00eatre \u00e9valu\u00e9 que par des sp\u00e9cialistes qualifi\u00e9s. Les distillats stock\u00e9s dans des f\u00fbts en bois pr\u00e9sentent en outre des ar\u00f4mes de barriques torr\u00e9fi\u00e9s, bois\u00e9s et \u00e9pic\u00e9s. Les distillats de caract\u00e8re sont souvent distill\u00e9s \u00e0 partir de vari\u00e9t\u00e9s autochtones de cerises, de prunes, de poires et de pommes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-contribution-a-la-protection-de-l-environnement\">Contribution \u00e0 la protection de l\u2019environnement<\/h2>\n\n\n\n<p>La consommation de ce genre de sp\u00e9cialit\u00e9s de schnaps contribue g\u00e9n\u00e9ralement \u00e9galement \u00e0 la protection de la biodiversit\u00e9, sachant que les distillats sp\u00e9cifiques aux vari\u00e9t\u00e9s assurent la survie de vari\u00e9t\u00e9s de fruits historiques et typiquement r\u00e9gionaux. L\u2019achat de schnaps fabriqu\u00e9 \u00e0 partir de fruits issus de production contr\u00f4l\u00e9e de hautes-tiges permet non seulement de soutenir la protection du paysage, mais encore d\u2019assurer la subsistance de diff\u00e9rentes esp\u00e8ces animales et v\u00e9g\u00e9tales, tout en encourageant les exploitations agricoles \u00e0 continuer \u00e0 soigner et cultiver leurs arbres \u00e0 hautes-tiges.<\/p>\n\n\n\n<p>Les distillats prim\u00e9s lors de concours internationaux et nationaux effectivement embouteill\u00e9s sont g\u00e9n\u00e9ralement de bonne qualit\u00e9 et recommandables.
