Coco et noisette, l\u2019originalit\u00e9 n\u2019est pas leurs saveurs, mais leurs ingr\u00e9dients\u2009: il n\u2019y a pas de cr\u00e8me.<\/strong><\/p>\n\n\n\n<p>Avec ses \u00ab\u2009caravegs\u2009\u00bb, la confiseuse des Ponts-de-Martel (NE) souhaite permettre aux intol\u00e9rants au lactose de manger des caramels. Par la m\u00eame occasion, elle r\u00e9pond aux demandes de ses clients v\u00e9ganes, qui refusent d\u2019exploiter, de faire souffrir ou de tuer des animaux.<\/p>\n\n\n\n<p>Val\u00e9rie Henchoz a d\u00e9marr\u00e9 son projet au d\u00e9but de l\u2019ann\u00e9e derni\u00e8re. Des ingr\u00e9dients de base, elle a gard\u00e9 le sucre et le glucose, et supprim\u00e9 la cr\u00e8me. Afin de trouver un substitut, elle s\u2019est inspir\u00e9e de recettes v\u00e9g\u00e9tariennes et v\u00e9ganes. Elle s\u2019est alors tourn\u00e9e vers les laits v\u00e9g\u00e9taux\u2009: \u00ab\u2009Je les ai quasiment tous essay\u00e9s. (\u2026) Obtenir l\u2019onctuosit\u00e9 voulue au moyen de mati\u00e8res premi\u00e8res pauvres en mati\u00e8re grasse est tr\u00e8s compliqu\u00e9.\u2009\u00bb<\/p>\n\n\n\n<p>Au bout d\u2019environ six mois d\u2019essais, elle a trouv\u00e9 une solution. Elle ajoute syst\u00e9matiquement de la cr\u00e8me de soja aux laits de coco, de noisette ou de riz. Plus liquide que le m\u00e9lange initial, la masse obtenue demande davantage de cuisson. Elle est \u00e9galement plus collante et plus difficile \u00e0 couper. \u00ab\u2009La production de caramels traditionnels est d\u00e9j\u00e0 laborieuse, mais l\u00e0, c\u2019est encore pire\u2009!\u2009\u00bb, pr\u00e9cise la patronne de Cr\u00e8me Renversante. Une raison qui explique certainement l\u2019absence de concurrence.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dans l\u2019esprit du v\u00e9ganisme<\/h2>\n\n\n\n<p>Ces cr\u00e9ations ne sont pas certifi\u00e9es v\u00e9ganes. \u00ab\u2009Elles ne contiennent pas de mati\u00e8res premi\u00e8res animales. En revanche, nous en utilisons dans le laboratoire pour d\u2019autres produits. Il pourrait alors arriver que les \u00ab\u2009caravegs\u2009\u00bb contiennent des traces de beurre ou de cr\u00e8me. Non certifi\u00e9s, ils sont toutefois r\u00e9alis\u00e9s dans l\u2019esprit v\u00e9gane. C\u2019est ce que nous mettons en avant.\u2009\u00bb<\/p>\n\n\n\n<p>C\u00f4t\u00e9 saveurs, elle a d\u00e9clin\u00e9 sa cr\u00e9ation en deux versions\u2009: coco et noisette. Les experts du Swiss Bakery Trophy (SBT) 2016 ont d\u2019ailleurs d\u00e9cor\u00e9 la seconde vari\u00e9t\u00e9 d\u2019une m\u00e9daille de bronze. Au passage, Val\u00e9rie Henchoz a aussi confirm\u00e9 son titre de championne cantonale obtenu en 2014. Press\u00e9e par le temps, la Neuch\u00e2teloise n\u2019a pu \u00e9toffer sa gamme. Toutefois, d\u2019ici l\u2019\u00e9t\u00e9 quelques articles \u00e0 base de fleurs locales devraient rejoindre les \u00e9tals.<\/p>\n\n\n\n<p>En raison des mati\u00e8res premi\u00e8res utilis\u00e9es, leur prix de vente est 10 \u00e0 20\u202f% plus \u00e9lev\u00e9 que celui de la gamme standard. Produits une fois par semaine, ils sont disponibles dans le bar \u00e0 chocolat de l\u2019entreprise familiale \u00e0 La Chaux-de-Fonds (NE), dans une \u00e9picerie \u00e0 Bienne (BE) et une autre \u00e0 Vevey (VD).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-gamme-en-devenir\">Gamme en devenir<\/h2>\n\n\n\n<p>V\u00e9g\u00e9tarienne, Val\u00e9rie Henchoz souhaite poursuivre sur sa lanc\u00e9e. \u00ab\u2009Je veux confectionner de plus en plus de sp\u00e9cialit\u00e9s v\u00e9ganes, sans gluten, plus saines et qui correspondent \u00e0 mes convictions.
