Moulues<br>260\u202fg de sucre\u2009; broyer finement ensemble<br>105\u202fg de blanc d\u2019\u0153uf frais<br>0,5\u202fg de safran<br>85\u202fg de blanc d\u2019\u0153uf frais<br>235\u202fg de sucre<br>60\u202fg d\u2019eau<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cr\u00e8me au beurre avec fondant (1000\u202fg)<\/h2>\n\n\n\n<p>665\u202fg de beurre<br>335\u202fg de fondant blanc<br>0,3\u202fg de gousse de vanille<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Fabrication<\/h2>\n\n\n\n<h2 class=\"wp-block-heading\">Masse \u00e0 macarons<\/h2>\n\n\n\n<p>Broyer finement les amandes moulues et le sucre. M\u00e9langer avec le safran et la premi\u00e8re part du blanc d\u2019\u0153uf.<br>Battre le reste du blanc en neige (plut\u00f4t molle-cr\u00e9meuse-stable). Cuire l\u2019eau et le sucre \u00e0 118\u202f\u00b0C et ajouter au blanc en neige. Continuer \u00e0 battre les blancs en neige jusqu\u2019\u00e0 ce que la masse ait atteint une temp\u00e9rature d\u2019environ 40\u202f\u00b0C.<br>Incorporer la premi\u00e8re part dans le pr\u00e9m\u00e9lange puis incorporer d\u00e9licatement la seconde part.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cuisson<\/h2>\n\n\n\n<p>Dresser des macarons sur des nattes T\u00e9flon (5\u202fg\u2009\/\u2009pi\u00e8ce).<br>Cuisson\u2009: cuire \u00e0 160\u202f\u00b0C (four \u00e0 \u00e9tages) pendant 12 \u00e0 14\u202fminutes, toujours sur une double plaque.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cr\u00e8me au beurre<\/h2>\n\n\n\n<p>Battre le beurre et la vanille puis incorporer progressivement le fondant mou.<\/p>\n\n\n\n<p>Pour aromatiser la cr\u00e8me au beurre, on peut aussi choisir de la confiture.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Fourrer et d\u00e9corer<\/h2>\n\n\n\n<p>Fourrer les macarons et d\u00e9corer avec un flocon dor\u00e9.
