Le propri\u00e9taire de l\u2019entreprise, Philipp Fuchs, entend l\u2019exploiter davantage en raison de l\u2019introduction de la nouvelle obligation de d\u00e9claration.<\/strong><\/p>\n\n\n\n<p>\u00ab\u2009Le r\u00e9gional et le local sont tr\u00e8s tendance\u2009\u00bb, constate le professionnel valaisan. Pratiquement tout le monde a pris conscience de l\u2019importance des denr\u00e9es alimentaires produites en Suisse depuis que la guerre a \u00e9clat\u00e9 en Ukraine et que les livraisons de c\u00e9r\u00e9ales font l\u2019objet de discussions. <\/p>\n\n\n\n<p>Philipp Fuchs se r\u00e9jouit que l\u2019obligation de d\u00e9claration pour le pain et les produits de boulangerie d\u00e9cid\u00e9e par le Conseil f\u00e9d\u00e9ral (en vigueur d\u00e8s f\u00e9vrier) offre \u00e0 l\u2019avenir plus de transparence aux consommateurs, m\u00eame si la bureaucratie s\u2019en trouve accrue, pour les entreprises artisanales notamment. Il faut selon lui tirer profit de cette opportunit\u00e9 pour se d\u00e9marquer des grands distributeurs et consorts. Elle approvisionne notamment des restaurants, des h\u00f4tels, des magasins d\u2019alimentation et quelques chalets. Les livraisons repr\u00e9sentent environ 25\u202f% du chiffre d\u2019affaires. Pr\u00e8s de 180 tonnes de farine et 12 \u00e0 13 tonnes de beurre sont transform\u00e9es chaque ann\u00e9e. On trouve 10 petits pains et au moins 20 sortes de pains dans l\u2019assortiment de la boulangerie Fuchs. \u00ab\u2009Si je n\u2019avais pas de livraisons, je ne proposerais que quatre \u00e0 cinq sortes de pain dans les magasins\u2009\u00bb, explique Philipp Fuchs. Mais les restaurateurs et les h\u00f4teliers souhaitent de la vari\u00e9t\u00e9. Il faut lutter contre les p\u00e2tons industriels servis dans les h\u00f4tels et les restaurants. \u00ab\u2009Ils font clairement concurrence aux produits des petites entreprises artisanales\u2009!\u2009\u00bb<\/p>\n\n\n\n<p>Dans les points de vente, il est tr\u00e8s rare que la client\u00e8le demande explicitement du pain suisse, les sp\u00e9cialit\u00e9s de Zermatt \u00e9tant bien plus pris\u00e9es. \u00ab\u2009Plus c\u2019est r\u00e9gional, mieux c\u2019est\u2009\u00bb, rel\u00e8ve le boulanger. Le logo \u00ab\u2009Pain suisse\u2009\u00bb est imprim\u00e9 sur les sachets dans lesquels est distribu\u00e9 le pain, seul le sachet sp\u00e9cial AOP pour le pain de seigle valaisan faisant exception.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-qualite-et-regionalite\">Qualit\u00e9 et r\u00e9gionalit\u00e9<\/h3>\n\n\n\n<p>Qu\u2019est-ce qui caract\u00e9rise la boulangerie Fuchs\u2009? \u00ab\u2009Nous nous d\u00e9marquons par des produits uniques\u2009\u00bb, r\u00e9pond spontan\u00e9ment Philipp Fuchs. Outre les pains bis et mi-blancs normaux, les pains maison, aux graines, au levain ou aux fruits sont \u00e9galement tr\u00e8s populaires. \u00ab\u2009Nous produisons tout nous-m\u00eames, nous n\u2019avons rien de pr\u00e9fabriqu\u00e9\u2009!\u2009\u00bb Le prix n\u2019est pas discut\u00e9\u2009: \u00ab\u2009Nous ne nous laissons pas pi\u00e9ger par le prix\u2009\u00bb, souligne l\u2019entrepreneur valaisan. C\u2019est selon lui le seul moyen de se d\u00e9marquer de l\u2019industrie et des grands distributeurs, et d\u2019\u00e9viter de causer du tort non seulement \u00e0 soi-m\u00eame, mais aussi \u00e0 l\u2019ensemble du secteur.
