Les petits \u00e9tablissements et les \u00e9tablissements plus anciens peinent \u00e0 rationaliser leur production, notamment en raison des possibilit\u00e9s de financement actuellement d\u00e9ficientes dans notre secteur.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-commerce-avec-cafe-un-sur-quatre\">Commerce avec caf\u00e9\u2009: un sur quatre<\/h2>\n\n\n\n<p>Un caf\u00e9 est rattach\u00e9 \u00e0 environ un quart des entreprises. La part de cette forme d\u2019exploitation n\u2019a cess\u00e9 d\u2019augmenter jusqu\u2019\u00e0 la fin du si\u00e8cle pass\u00e9, alors qu\u2019elle accuse une l\u00e9g\u00e8re baisse ces derni\u00e8res ann\u00e9es pour stagner \u00e0 plus ou moins 25\u202f%. Cette \u00e9volution est sans aucun doute \u00e0 mettre sur le compte de la saturation du march\u00e9 de la restauration et de l\u2019apparition de nouveaux acteurs (les \u00e9tablissements offrant des plats \u00e0 emporter, les TopShops Landi et les boutiques de stations-service).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Concurrence<\/h2>\n\n\n\n<p>La part boulangeries-confiseries proposant une gamme de produits compl\u00e9mentaires continue \u00e0 se r\u00e9duire. Dans ce segment du march\u00e9, les boutiques de stations-service constituent notre principale concurrence et elles ne cessent de cro\u00eetre.<\/p>\n\n\n\n<p>Contre toute attente, les \u00e9tablissements proposant une vaste gamme de marchandises de revente ne fl\u00e9chissent pas, et ce malgr\u00e9 la concurrence croissante et la diminution des marges.
