Il g\u00e8re aujourd\u2019hui cinq filiales, un h\u00f4tel pour levain, et donne des cours sur ce m\u00eame produit. Son cercle de fans s\u2019\u00e9tend jusqu\u2019au nord de l\u2019Allemagne. Sa pr\u00e9sence m\u00e9diatique est consid\u00e9rable.<\/strong><\/p>\n\n\n\n<p>Non, la boulangerie-p\u00e2tisserie n\u2019\u00e9tait pas la grande passion de Martin Mayer\u2009; jusqu\u2019\u00e0 ce qu\u2019il soit touch\u00e9 par le feu sacr\u00e9 en Nouvelle-Z\u00e9lande. Il avait opt\u00e9 pour cet apprentissage uniquement parce que la boulangerie se trouvait juste en face de la maison de ses parents et que les horaires de travail \u00e9taient parfaitement compatibles avec son sport\u2009: le triathlon. Sa formation termin\u00e9e, il a notamment \u00e9volu\u00e9 dans les t\u00e9l\u00e9communications pour subvenir \u00e0 ses besoins. Tout a chang\u00e9 lors de son voyage en Nouvelle-Z\u00e9lande, o\u00f9 il a travaill\u00e9 dans une boulangerie pour gagner sa vie. Il y a d\u00e9couvert le levain de bl\u00e9\u2009; cette exp\u00e9rience allait bouleverser sa vie. L\u2019entreprise compte cinq points de vente (dont un avec une partie restauration) et 70 collaborateurs. Cinq personnes sont en formation dans la boulangerie-p\u00e2tisserie, et des places d\u2019apprentissage suppl\u00e9mentaires devraient \u00eatre propos\u00e9es en 2024 dans le domaine de la p\u00e2tisserie-confiserie. Une sp\u00e9cialiste RH g\u00e8re les ressources humaines depuis pr\u00e8s de trois ans.
