Comment le cuisinier-p\u00e2tissier-confiseur en est-il venu \u00e0 reprendre cette entreprise traditionnelle\u2009? Comment la transmission s\u2019est-elle d\u00e9roul\u00e9e\u2009? Et que pense le personnel du nouveau propri\u00e9taire\u2009?<\/strong><\/p>\n\n\n\n<p>\u00ab\u2009La finale sucr\u00e9e n\u2019est pas assez c\u00e9l\u00e9br\u00e9e dans la cuisine classique.\u2009\u00bb C\u2019est par ces mots que Roman Diethelm, le nouveau patron de la p\u00e2tisserie-confiserie Reber \u00e0 Schaffhouse, commence le r\u00e9cit de son parcours. Mais ses exigences par rapport \u00e0 un commerce potentiel \u00e9taient claires: \u00ab\u2009Une composante touristique, une marque connue et un financement autonome \u00e9taient un must.\u2009\u00bb Car selon lui, une d\u00e9cision aussi importante ne se prend pas \u00e0 la l\u00e9g\u00e8re, plusieurs \u00e9l\u00e9ments entrant en ligne de compte: \u00ab\u2009La situation familiale, la situation professionnelle, le d\u00e9m\u00e9nagement, les finances\u2026 Il faut du karma et d\u2019heureux hasards.\u2009\u00bb<br>Comme le dernier-n\u00e9 de la famille Diethelm portait encore des couches et qu\u2019un autre enfant \u00e9tait d\u00e9sir\u00e9, l\u2019homme d\u2019affaires a embarqu\u00e9 dans l\u2019aventure son ami de l\u2019\u00e9cole h\u00f4teli\u00e8re. \u00ab\u2009\u2009Nous voulions nous diversifier et nous r\u00e9partir les t\u00e2ches \u2013 mon partenaire se chargeant de la vente, moi de la production, l\u2019administration \u00e9tant de notre ressort \u00e0 tous les deux.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-double-bonheur\"><br>Double bonheur<\/h2>\n\n\n\n<p>C\u2019est par hasard que les propri\u00e9taires de la p\u00e2tisserie-confiserie Reber \u00e0 Schaffhouse, Lis et Laurent Perriraz, ont commenc\u00e9 \u00e0 chercher un successeur au m\u00eame moment, apr\u00e8s plus de 30 ans d\u2019activit\u00e9.
