De nouveaux lieux de travail et d\u2019habitation voient le jour.<\/strong><\/p>\n\n\n\n<p>Parall\u00e8lement, nos besoins \u00e9voluent\u2009: outre le prix, la sant\u00e9, le d\u00e9veloppement durable, les offres individualisables ou les syst\u00e8mes de commande num\u00e9ris\u00e9s, la cr\u00e9dibilit\u00e9 et la transparence gagnent \u00e9galement en importance. Les m\u00e9gatendances marquent notre comportement en mati\u00e8re de consommation\u2009; d\u2019abord en ville, puis en campagne.<\/p>\n\n\n\n<p>Le restaurant classique avec menu 1\u2009\/\u20092\u2009\/\u20093 et service \u00e0 table est-il un mod\u00e8le en voie de disparition\u2009? A midi, les convenience stores, les kiosques ou les take aways prennent de plus en plus en charge la restauration hors domicile. Parall\u00e8lement, les bistrots et les caf\u00e9s-bars qui proposent de la restauration tout au long de la journ\u00e9e prolif\u00e8rent. Et on le voit notamment en campagne\u2009: le dernier restaurant de la place meurt bien avant le snack-bar de la gare.<\/p>\n\n\n\n<p>Les restaurants au sens classique du terme continueront \u00e9videmment d\u2019exister \u00e0 l\u2019avenir, mais il semble plausible que leur nombre diminue et que leur qualit\u00e9 augmente. Les formats rapides et compacts de restauration tout au long de la journ\u00e9e sis dans des lieux tr\u00e8s fr\u00e9quent\u00e9s pourraient \u00e9galement se multiplier. <\/p>\n\n\n\n<p>Le coffee bakery incarne par exemple ce genre de concept\u2009; un format adapt\u00e9 \u00e0 l\u2019avenir r\u00e9sultant de la fusion d\u2019un caf\u00e9-bar et d\u2019une filiale de boulangerie.
