Ce fils de p\u00e2tissier s\u2019est fait conna\u00eetre en tant que cofondateur de l\u2019entreprise zurichoise John Baker. Et John Baker AG et la coop\u00e9rative ZFV-Unternehmungen collaborent depuis peu\u2009: les visions du boulanger Jens Jung et du groupe de restauration ZFV \u2013 et des boulangeries Kleiner \u2013 allaient et vont toujours dans la m\u00eame direction. Ou, comme l\u2019indique le site web, \u00ab\u2009depuis janvier\u202f2024, Jung et Kleiner ont fusionn\u00e9 en une seule entreprise, et cette fusion a donn\u00e9 naissance \u00e0 Kleiner Jung AG\u2009\u00bb.Le nouvel univers en d\u00e9coulant porte la mention \u00ab\u2009inspir\u00e9 de John Baker\u2009\u00bb.<\/p>\n\n\n\n<p>Dans ce beau nouveau monde de John Baker, au Stadelhofen de Zurich, on faisait du pain bio, on fermentait des levains, on les \u00e9tendait, on les fa\u00e7onnait, on les pliait, on les bichonnait, le tout \u00e0 la main. Les jeunes gens voulaient faire du \u00ab\u2009pain original\u2009\u00bb avec des ingr\u00e9dients issus d\u2019une production durable et \u00e9quitable, \u00e0 l\u2019\u00e9poque d\u00e9j\u00e0. C\u2019\u00e9tait en 2013. Zurich \u00e9tait sous le charme.<\/p>\n\n\n\n<p>Et l\u2019est encore aujourd\u2019hui.
