Une proc\u00e9dure syst\u00e9matique avec des crit\u00e8res objectifs augmente la pr\u00e9cision de la description sensorielle et renforce la comp\u00e9tence du d\u00e9gustateur.<\/p>\n\n\n\n<p><strong>Niveaux de la roue des ar\u00f4mes<\/strong><br>La roue se compose de trois cercles concentriques. Ceux-ci sont s\u00e9par\u00e9s par des couleurs en plusieurs cat\u00e9gories aromatiques\u2009: fruit\u00e9, floral, v\u00e9g\u00e9tal, etc. Dans le cercle int\u00e9rieur, ces cat\u00e9gories sont divis\u00e9es en sous-cat\u00e9gories telles que les fruits \u00e0 noyau, les baies, les agrumes, les fruits exotiques, etc. Le cercle ext\u00e9rieur contient des dizaines d\u2019attributs individuels qui peuvent \u00eatre caract\u00e9ris\u00e9s par des r\u00e9f\u00e9rences aromatiques. Le d\u00e9gustateur devrait \u00eatre en bonne sant\u00e9 et de pr\u00e9f\u00e9rence non-fumeur. Il devrait \u00eatre concentr\u00e9 et pouvoir travailler sans \u00eatre d\u00e9rang\u00e9. Le cadre dans lequel la d\u00e9gustation se d\u00e9roule a son importance. Il faut donc veiller \u00e0 ce que la pi\u00e8ce soit bien a\u00e9r\u00e9e et \u00e9clair\u00e9e.
