Il en a \u00e9t\u00e9 de m\u00eame pour le d\u00e9veloppement des vari\u00e9t\u00e9s, leur teneur en prot\u00e9ines et le marketing du pain suisse.<\/strong><\/p>\n\n\n\n<p>La journ\u00e9e de la qualit\u00e9 que swiss granum organise une fois par an en collaboration avec l\u2019association Pain suisse, offre de pr\u00e9cieuses informations \u00e0 tous les acteurs de la cha\u00eene de distribution des c\u00e9r\u00e9ales. La semaine pass\u00e9e, au Stade de Suisse \u00e0 Berne, il a notamment \u00e9t\u00e9 question de quantit\u00e9 et de qualit\u00e9 de la r\u00e9colte, de teneur en prot\u00e9ines et de marketing.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-quantite-et-qualite-de-la-recolte\">Quantit\u00e9 et qualit\u00e9 de la r\u00e9colte<\/h2>\n\n\n\n<p>Andreas Dossenbach, chef du laboratoire de Richemont, a pr\u00e9sent\u00e9 les r\u00e9sultats de laboratoire et les essais de cuisson de la nouvelle r\u00e9colte ayant abouti \u00e0 des recommandations pour la production (voir version imprim\u00e9e). Sa conclusion\u2009: \u00ab\u2009Il est possible de fabriquer un pain id\u00e9al, \u00e0 condition d\u2019appliquer ces corrections cibl\u00e9es.\u2009\u00bb<\/p>\n\n\n\n<p>Andr\u00e9 Betschart, responsable achats du Groupe Minoteries et Matthias Staehelin de Swissmill, ont d\u00e9crit la qualit\u00e9 de la r\u00e9colte du point de vue des meuniers. Des grains plus petits, une teneur en cendres plus \u00e9lev\u00e9e et une absorption d\u2019eau moindre ne sont pas bons pour les moulins. La teneur en prot\u00e9ines est heureusement \u00e9lev\u00e9e (au-dessus de 14\u202f% pour 54\u202f% des r\u00e9coltes), ce qui renforce la position des c\u00e9r\u00e9ales suisses au niveau du prix.<\/p>\n\n\n\n<p>Sandro Rechsteiner, \u00e9tudiant EPF et artisan boulanger-p\u00e2tissier, a pr\u00e9sent\u00e9 son travail de master consacr\u00e9 au d\u00e9veloppement de la qualit\u00e9 des c\u00e9r\u00e9ales suisses et Thomas Weisflog (directeur adjoint de swiss granum) a, quant \u00e0 lui, pr\u00e9sent\u00e9 les r\u00e9sultats des contr\u00f4les de vari\u00e9t\u00e9s si importants pour la qualit\u00e9 suisse.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Regard au-del\u00e0 des fronti\u00e8res<\/h2>\n\n\n\n<p>R\u00e9my Courbou, \u00e9tudiant en agronomie de Lyon (F), a compar\u00e9 la qualit\u00e9 et la teneur en prot\u00e9ines du bl\u00e9 en France et en Suisse. En d\u00e9pit des protestations des boulangers, la France a mis\u00e9 depuis 1970 sur des vari\u00e9t\u00e9s \u00e0 haut rendement, au d\u00e9triment de la teneur en prot\u00e9ines qui n\u2019est que de 11\u202f%. Environ 50\u202f% de la production est export\u00e9e, principalement vers l\u2019Afrique.<\/p>\n\n\n\n<p>Parlant au nom de la branche allemande des c\u00e9r\u00e9ales, le Dr Peter Haarbeck, directeur de l\u2019Association allemande des meuniers, a d\u00e9crit la collaboration de la branche des c\u00e9r\u00e9ales en Allemagne. A d\u00e9faut d\u2019une organisation commune \u00e0 tous les acteurs, telle que swiss granum, beaucoup de choses sont r\u00e9gl\u00e9es bilat\u00e9ralement et le paiement actuel bas\u00e9 sur la teneur en prot\u00e9ines fait l\u2019objet de critiques.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Positionner le pain suisse<\/h2>\n\n\n\n<p>Urs Schneider, pr\u00e9sident d\u2019Agro-Marketing Suisse, a plaid\u00e9 pour une meilleure exploitation du c\u00e9l\u00e8bre label Swiss Garantie pour le pain.<\/p>\n\n\n\n<p>Sara Meyer a parl\u00e9 de la mani\u00e8re dont les consommateurs per\u00e7oivent le pain suisse.<\/p>\n\n\n\n<p>swiss granum est \u00e9galement l\u2019organisation professionnelle pour les prot\u00e9agineux, comme le colza et les c\u00e9r\u00e9ales fourrag\u00e8res. Une journ\u00e9e consacr\u00e9e aux prot\u00e9agineux et aux sources de prot\u00e9ines alternatives a ainsi \u00e9t\u00e9 organis\u00e9e parall\u00e8lement \u00e0 celle de la qualit\u00e9.
