Elle peut d\u00e9sormais \u00eatre consult\u00e9e sur <a href=\"https:\/\/swissbaker.ch\/fr\/histoire-de-la-bcs\/\">ce site<\/a><\/strong>.<\/p>\n\n\n\n<p>Jusqu\u2019\u00e0 ce jour, les d\u00e9cisions et \u00e9v\u00e9nements marquants de l\u2019histoire de l\u2019association \u00e9taient \u00e9parpill\u00e9s dans diff\u00e9rentes publications anniversaires, dans d\u2019anciens num\u00e9ros de \u00ab\u2009Panissimo\u2009\u00bb et dans divers \u00e9crits. Markus Tscherrig, vice-directeur de la BCS pendant des ann\u00e9es aujourd\u2019hui \u00e0 la retraite, a effectu\u00e9 des recherches m\u00e9ticuleuses pendant des heures et r\u00e9sum\u00e9 de mani\u00e8re claire les nombreux chiffres et informations. Un travail pr\u00e9cieux, efficace et durable. Ci-apr\u00e8s ses r\u00e9flexions sur le sujet\u2009:<\/p>\n\n\n\n<p>La BCS m\u2019a contact\u00e9 pour me demander de num\u00e9riser l\u2019histoire de l\u2019association depuis sa cr\u00e9ation pour la transmettre \u00e0 la post\u00e9rit\u00e9. J\u2019ai travaill\u00e9 pour le secteur tout au long de ma carri\u00e8re professionnelle, apr\u00e8s mes \u00e9tudes d\u2019\u00e9conomie et jusqu\u2019\u00e0 ma retraite; en comptabilisant 37 ann\u00e9es de service au total, dont les derni\u00e8res en tant que vice-directeur de la BCS et r\u00e9dacteur en chef de \u00ab\u2009Panissimo\u2009\u00bb. J\u2019ai donc pu suivre de pr\u00e8s une part importante de son \u00e9volution, je me suis volontiers attel\u00e9 \u00e0 cette t\u00e2che int\u00e9ressante. J\u2019ai recherch\u00e9 les \u00e9v\u00e9nements les plus importants dans les publications anniversaires, les rapports annuels et les journaux de l\u2019association pour les r\u00e9sumer par ann\u00e9e.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img decoding=\"async\" width=\"612\" height=\"712\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/markus_tscherrig_im_archiv.jpg\" alt=\"Markus Tscherrig\" class=\"wp-image-75117\" style=\"width:388px;height:auto\"\/><figcaption class=\"wp-element-caption\"><em>Markus Tscherrig, ancien r\u00e9dacteur en chef de \u00abPanissimo\u00bb et vice-directeur de la BC<\/em>S<\/figcaption><\/figure>\n<\/div>\n\n\n<p><br>Les assembl\u00e9es constitutives ont eu lieu en 1885 pour les boulangers et en 1889 pour les p\u00e2tissiers. Le regroupement en associations \u00e9tait principalement motiv\u00e9 par la d\u00e9fense et la promotion des int\u00e9r\u00eats de la profession et le maintien de la coll\u00e9gialit\u00e9 entre les professionnels. Les turbulences et les d\u00e9bats anim\u00e9s n\u2019ont pas manqu\u00e9 d\u00e8s le d\u00e9but, mais au final, le constat s\u2019est impos\u00e9 que seuls la solidarit\u00e9 et l\u2019esprit communautaire de tous les membres permettent d\u2019obtenir le meilleur pour le secteur.<br>Les deux associations professionnelles ont rev\u00eatu une importance particuli\u00e8re pendant les deux guerres mondiales, lorsqu\u2019est venue l\u2019heure de soutenir les membres dans l\u2019application des nombreuses prescriptions de l\u2019\u00e9conomie de guerre\u2009; dont l\u2019interdiction de vendre du pain frais.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-quelques-exemples\">Quelques exemples<\/h2>\n\n\n\n<p>La consommation de pain a \u00e9t\u00e9 la plus \u00e9lev\u00e9e en 1919, avec 125\u202fkg par habitant, soit plus du double de la consommation actuelle\u2009! La premi\u00e8re convention collective de travail suisse du secteur a \u00e9t\u00e9 conclue la m\u00eame ann\u00e9e. Une grande importance a toujours \u00e9t\u00e9 accord\u00e9e \u00e0 la formation professionnelle et continue, l\u2019Ecole professionnelle Richemont ayant \u00e9t\u00e9 ouverte en 1945. <\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"has-text-align-center has-text-color has-link-color wp-elements-d5996236a948d198cbf2a06bf07226bc\" style=\"color:#cc9933;font-size:22px;font-style:normal;font-weight:700\">consommation de pain <br>la plus \u00e9lev\u00e9e par habitant\u2009: <br>125\u202fkg en 1919<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>En 1948, les p\u00e2tissiers ont interdit aux nouveaux membres d\u2019appartenir en m\u00eame temps \u00e0 une autre association professionnelle apparent\u00e9e, afin d\u2019\u00e9viter les infiltrations \u00e9trang\u00e8res \u00e0 la profession et \u00e0 l\u2019association\u2009; un sc\u00e9nario totalement impensable aujourd\u2019hui\u2009!<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img decoding=\"async\" width=\"910\" height=\"464\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_wappen.jpg\" alt=\"\" class=\"wp-image-74746\" style=\"width:634px;height:auto\" srcset=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_wappen.jpg 910w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_wappen-768x392.jpg 768w\" sizes=\"(max-width: 910px) 100vw, 910px\" \/><figcaption class=\"wp-element-caption\"><em>Les premiers logos des deux associations\u2009: boulangers-p\u00e2tissiers et p\u00e2tissiers (confiseurs).<\/em><\/figcaption><\/figure>\n<\/div>\n\n\n<p>L\u2019action la plus fructueuse du secteur de la boulangerie a d\u00e9but\u00e9 le 6\u202fjanvier 1951 avec le lancement de la galette des rois. L\u2019Association suisse des patrons boulangers-p\u00e2tissiers (ASPBP) a atteint son plus grand nombre de membres en 1953, avec 7880 ma\u00eetres boulangers affili\u00e9s. La premi\u00e8re Foire sp\u00e9cialis\u00e9e en mat\u00e9riel de boulangerie et de p\u00e2tisserie (FBK) a \u00e9t\u00e9 organis\u00e9e en 1961. Le logo \u00ab\u2009De votre boulanger\u2009\u00bb qui, aujourd\u2019hui encore, permet d\u2019identifier les entreprises artisanales a \u00e9t\u00e9 cr\u00e9\u00e9 en 1976. En 1985, le centenaire de l\u2019ASPBP a constitu\u00e9 un point fort particulier, avec un grand d\u00e9fil\u00e9 de boulangers \u00e0 la Bahnhofstrasse de Zurich et une pr\u00e9sentation nationale \u00e0 l\u2019exposition bernoise BEA. <\/p>\n\n\n\n<p>La premi\u00e8re convention collective de travail pour le personnel de vente est entr\u00e9e en vigueur en 1990, et l\u2019apprentissage de boulanger sur deux ans a \u00e9t\u00e9 supprim\u00e9 en 1996 au profit d\u2019un programme de formation flexible sur trois ans. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"687\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_sbt-1024x687.jpg\" alt=\"\" class=\"wp-image-75148\" srcset=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_sbt-1024x687.jpg 1024w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_sbt-768x515.jpg 768w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_sbt-1536x1031.jpg 1536w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_sbt.jpg 1599w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\"><em>Swiss Bakery Trophy 2004<\/em><\/figcaption><\/figure>\n\n\n\n<p>D\u2019autres jalons ont \u00e9t\u00e9 pos\u00e9s en 2004 avec la premi\u00e8re \u00e9dition du Swiss Bakery Trophy et la pr\u00e9sentation de plus de 1000 sp\u00e9cialit\u00e9s de boulangerie-p\u00e2tisserie-confiserie artisanale, et en 2010 avec la premi\u00e8re Nuit des boulangers suisses, qui a permis \u00e0 diff\u00e9rents fournils d\u2019ouvrir leurs portes au public.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-oui-a-la-fusion-des-deux-cotes\">Oui \u00e0 la fusion des deux c\u00f4t\u00e9s<\/h2>\n\n\n\n<p>En 2012, apr\u00e8s des ann\u00e9es de va-et-vient, la fusion de l\u2019ASPBP et de l\u2019Union suisse des patrons p\u00e2tissiers-confiseurs (USPC), attendue depuis longtemps, a enfin \u00e9t\u00e9 d\u00e9cid\u00e9e et r\u00e9alis\u00e9e au 1er\u202fjanvier 2013. Un contrat de collaboration entre les deux associations \u00e9tait entr\u00e9 en vigueur en 1997 d\u00e9j\u00e0. L\u2019int\u00e9gration du secr\u00e9tariat de l\u2019USPC dans l\u2019ASPBP datait pour sa part de 2001. Des partisans de la ligne dure des deux c\u00f4t\u00e9s ayant n\u00e9anmoins r\u00e9ussi \u00e0 interrompre provisoirement les n\u00e9gociations d\u2019int\u00e9gration en 2003, ce n\u2019est qu\u2019en 2007 que le contrat de collaboration a \u00e9t\u00e9 prolong\u00e9 et que la palette de services des institutions de l\u2019ASPBP a \u00e9t\u00e9 enti\u00e8rement mise \u00e0 la disposition des membres de l\u2019USPC.<\/p>\n\n\n\n<p>Le regroupement sous le nouveau toit \u00ab\u2009Boulangers-confiseurs suisses\u2009\u00bb peut \u00eatre consid\u00e9r\u00e9 comme un grand pas vers un avenir commun prosp\u00e8re.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"608\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_praesidenten_fusion-1024x608.jpg\" alt=\"\" class=\"wp-image-75121\" srcset=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_praesidenten_fusion-1024x608.jpg 1024w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_praesidenten_fusion-768x456.jpg 768w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2024\/02\/verbandsgeschichte_praesidenten_fusion.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\"><em>En 2012, fusion entre l\u2019USPC et de l\u2019ASPBP. Ci-dessus les deux pr\u00e9sidents respectifs, Stefan Romang (g.) et Kaspar Sutter.<\/em><\/figcaption><\/figure>\n\n\n\n<p>Plus r\u00e9cemment, on peut mentionner la d\u00e9claration de force obligatoire de la CCT sectorielle intervenue en 2015. En 2019, le projet \u00ab\u2009Reload\u2009\u00bb a permis de prendre en main la r\u00e9organisation de l\u2019association dans le but d\u2019optimiser les processus. La pand\u00e9mie de coronavirus, qui a entra\u00een\u00e9 une perte de chiffre d\u2019affaires consid\u00e9rable pour de nombreuses entreprises, est encore dans toutes les m\u00e9moires. L\u2019engagement de l\u2019association a n\u00e9anmoins permis d\u2019obtenir que les boulangeries-confiseries puissent ouvrir pendant le confinement d\u00e9cr\u00e9t\u00e9 par le Conseil f\u00e9d\u00e9ral.<\/p>\n\n\n\n<p>Aujourd\u2019hui, outre l\u2019\u00e9volution du march\u00e9 avec un nombre croissant de fournisseurs de pain et de produits de boulangerie, le manque de personnel qualifi\u00e9, la rel\u00e8ve et la pression financi\u00e8re \u2013 induite notamment par l\u2019augmentation massive des co\u00fbts de l\u2019\u00e9nergie \u2013 constituent les principaux probl\u00e8mes du secteur de la boulangerie-p\u00e2tisserie-confiserie.
