Leurs objectifs? Comparer leurs cr\u00e9ations \u00e0 celles de leurs coll\u00e8gues, les soumettre \u00e0 la critique constructive d\u2019experts, et tenter de remporter une m\u00e9daille, un prix, un titre.<\/strong><\/p>\n\n\n\n<p>Une fois n\u2019est pas coutume, le Swiss Bakery Trophy (SBT) sera l\u2019invit\u00e9 d\u2019honneur suisse des Go\u00fbts et terroirs, du 28\u202foctobre au 1er\u202fnovembre \u00e0 Bulle. Durant cinq jours, les artisans boulangers-p\u00e2tissiers-confiseurs des quatre coins du pays soumettront leurs produits \u00e0 la taxation. Deux semaines avant le d\u00e9but des festivit\u00e9s, les organisateurs tablent sur pr\u00e8s de 1400 sp\u00e9cialit\u00e9s provenant de 195 entreprises. Pour les go\u00fbter et les \u00e9valuer, environ 280 taxateurs, professionnels de la branche et consommateurs, seront \u00e0 pied d\u2019\u0153uvre tout au long de la manifestation.<\/p>\n\n\n\n<p>Anonymis\u00e9, chaque article sera r\u00e9parti sur les tables des jur\u00e9s. Ils \u00e9valueront l\u2019aspect, l\u2019impression g\u00e9n\u00e9rale, la forme, la surface la r\u00e9action en bouche, la structure, l\u2019odeur, le go\u00fbt et l\u2019ar\u00f4me. Au total, 100 points seront \u00e0 prendre. Le r\u00e9sultat d\u00e9terminera si la sp\u00e9cialit\u00e9 m\u00e9rite ou non une m\u00e9daille; et, si tel est le cas, la couleur de celle-ci. Les meilleures cr\u00e9ations boulangerie, p\u00e2tisserie, confiserie et snack-traiteur (nouveaut\u00e9 2016) recevront un prix sp\u00e9cial. Quant \u00e0 la plus innovante d\u2019entre toutes, elle se verra d\u00e9cerner le troph\u00e9e Bernhard Aebersold, du nom du boulanger moratois, fondateur du SBT.<\/p>\n\n\n\n<p>A pr\u00e9ciser que les entreprises qui pr\u00e9sentent un minimum de cinq articles concourent pour le titre convoit\u00e9 de Swiss Baker Trophy Champion 2016\u20132017. La remise des prix se d\u00e9roulera le mardi 1er\u202fnovembre \u00e0 14\u2005h\u200530. Les artisans prim\u00e9s pourront alors mettre en avant leur titre et leurs m\u00e9dailles. Pour y parvenir, ils pourront b\u00e9n\u00e9ficier d\u2019un suivi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pour-tous-les-gouts\">Pour tous les go\u00fbts<\/h2>\n\n\n\n<p>Toujours au chapitre des nouveaut\u00e9s\u2005: le stand du SBT sera davantage ouvert au public. Les 45\u2005000 visiteurs attendus pourront \u00absillonner\u00bb entre les tables et ainsi \u00eatre au plus proches des produits et de leurs artisans; de quoi faciliter les discussions et les rencontres. Comme chaque ann\u00e9e, ils auront \u00e9galement l\u2019occasion de d\u00e9guster des produits. A deux reprises durant la journ\u00e9e, les dames boulang\u00e8res-confiseuses se chargeront de la vente des sp\u00e9cialit\u00e9s expos\u00e9es au profit d\u2019une association.<\/p>\n\n\n\n<p>Plusieurs ateliers et animations autour du monde de la boulangerie-confiserie sont aussi au programme. Certains visiteurs assisteront aux d\u00e9monstrations des cantons invit\u00e9s que sont le Tessin, Vaud et Zoug. D\u2019autres d\u00e9couvriront dans l\u2019ar\u00e8ne gourmande les recettes des sucettes chocolat, des florentins aux abricots et de l\u2019entremets panachoco, en compagnie d\u2019un artisan et d\u2019une personnalit\u00e9.<\/p>\n\n\n\n<p>Sans oublier, bien \u00e9videmment, la finale romande et tessinoise des meilleurs jeunes boulangers et celle des meilleurs jeunes gestionnaires du commerce de d\u00e9tail.
