Moi aussi d\u2019ailleurs, et c\u2019est pourquoi j\u2019aime aller d\u2019une boulangerie \u00e0 l\u2019autre lors de mes s\u00e9jours en Gr\u00e8ce. Ce faisant, j\u2019essaie de temps \u00e0 autre, dans le cadre de ma fonction d\u2019expert sensoriel sp\u00e9cialis\u00e9 dans le design alimentaire, de d\u00e9crypter le code du plaisir des gourmandises que j\u2019ach\u00e8te.<\/p>\n\n\n\n<p>Pour comprendre l\u2019amour des Grecs pour les douceurs, il est indispensable de s\u2019int\u00e9resser \u00e0 la gastronomie grecque. Il est passionnant de constater que la cuisine grecque traditionnelle n\u2019a pas \u00e9t\u00e9 rel\u00e9gu\u00e9e au mus\u00e9e au cours de l\u2019histoire, mais qu\u2019elle fait toujours partie de la culture alimentaire quotidienne. Par cons\u00e9quent, de nombreuses friandises traditionnelles d\u2019autrefois se retrouvent encore sur la table.<\/p>\n\n\n\n<p>Il suffit de jeter un coup d\u2019\u0153il dans les vitrines des boulangeries et des p\u00e2tisseries grecques pour se rendre compte que cette tradition v\u00e9cue n\u2019est pas n\u00e9cessairement un frein au progr\u00e8s. On y trouve non seulement des p\u00e2tisseries traditionnelles sucr\u00e9es et hypercollantes, mais aussi des cr\u00e9ations tr\u00e8s modernes. Et dans la cat\u00e9gorie des glaces non plus, le temps ne s\u2019est pas arr\u00eat\u00e9. Dans ce domaine, les petits cornets, propos\u00e9s en diff\u00e9rents parfums, font partie de mes pr\u00e9f\u00e9r\u00e9s.<\/p>\n\n\n\n<p>J\u2019aimerais aussi trouver quelques sp\u00e9cialit\u00e9s et particularit\u00e9s grecques dans les boulangeries et p\u00e2tisseries suisses. Par exemple, j\u2019aime que le pain choisi soit pes\u00e9 avant d\u2019\u00eatre achet\u00e9 et que la miche soit finalement pay\u00e9e au gramme.<\/p>\n\n\n\n<p>C\u00e9l\u00e8bre journaliste gastronomique et analyste sensoriel, Patrick Zbinden a \u00e9t\u00e9 nomm\u00e9 Ambassadeur du pain et du chocolat 2021 lors du Congr\u00e8s de la BCS.
