La plupart des boulangeries font miroiter \u00e0 leur client\u00e8le une notion d\u2019artisanat qui n\u2019est plus vraiment l\u00e9gitime depuis des d\u00e9cennies. Certainement pas par mauvaise intention, mais plut\u00f4t par crainte que la client\u00e8le ne leur en veuille si elle apprenait qu\u2019une grande partie de l\u2019assortiment repose sur une aide industrielle. Pr\u00e9m\u00e9langes et m\u00e9langes pr\u00eats \u00e0 l\u2019emploi, p\u00e2tes au levain ou levains pr\u00eats \u00e0 l\u2019emploi, p\u00e2tons ou produits de boulangerie surgel\u00e9s ou encore am\u00e9liorants \u00e0 base d\u2019enzymes et d\u2019\u00e9mulsifiants ; autant de moyens pour s\u00e9duire la client\u00e8le avec de grands et jolis produits de boulangerie \u00e0 un prix abordable, tant que l\u2019on ne r\u00e9v\u00e8le pas qu\u2019ils ont \u00e9t\u00e9 confectionn\u00e9s autrement que selon une m\u00e9thode dite \u00ab artisanale \u00bb. L\u2019artisanat a-t-il \u00e9t\u00e9 rel\u00e9gu\u00e9 au rang d\u2019atelier prolong\u00e9 de l\u2019industrie ?<\/p>\n\n\n\n<p>Le prix \u00e0 payer pour le mensonge de la boulangerie artisanale est la comparabilit\u00e9. En effet, les produits de boulangerie sont devenus comparables \u00e0 ce que l\u2019industrie peut produire plus rapidement, plus efficacement et \u00e0 moindre co\u00fbt. Selon un sondage forsa*, 100 % des exploitations interrog\u00e9es en Allemagne se consid\u00e8rent comme des boulangeries artisanales, mais 53 % utilisent des farines trait\u00e9es, 31 % utilisent en outre des additifs et am\u00e9liorants dans la p\u00e2te, 49 % utilisent des pr\u00e9m\u00e9langes et des m\u00e9langes pr\u00eats \u00e0 l\u2019emploi et 42 % ach\u00e8tent des p\u00e2tons. Et ce n\u2019est probablement que la pointe de l\u2019iceberg.<\/p>\n\n\n\n<p>Environ quatre exploitations sur cinq ne d\u00e9clarent pas \u00e0 leur client\u00e8le qu\u2019elles ach\u00e8tent des pr\u00e9m\u00e9langes, des m\u00e9langes pr\u00eats \u00e0 l\u2019emploi ou des p\u00e2tons. Elles pr\u00e9sentent leurs produits de boulangerie comme \u00e9tant pr\u00e9par\u00e9s de mani\u00e8re \u00ab artisanale \u00bb.<\/p>\n\n\n\n<p>L\u2019artisanat commence dans la t\u00eate.
