Au printemps, David Pasquiet et lui ont \u00e9t\u00e9 les premiers p\u00e2tissiers-confiseurs suisses \u00e0 recevoir le <a href=\"https:\/\/swissbaker.ch\/fr\/panissimo-news\/galerie\/merite-culinaire-suisse-2023\/\">M\u00e9rite culinaire<\/a> \u00e0 Berne des mains du conseiller f\u00e9d\u00e9ral Guy Parmelin. En juin, lors du congr\u00e8s de l\u2019Association suisse des patrons boulangers-confiseurs \u00e0 Berne, il a \u00e9t\u00e9 le premier Tessinois \u00e0 recevoir la <a href=\"https:\/\/swissbaker.ch\/fr\/panissimo-news\/le-tessinois-mastro-piff-est-le-laureat-de-la-couronne-boulangere-2023\/\">couronne boulang\u00e8re<\/a>.<\/p>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-reactions-romands-et-alemaniques\">R\u00e9actions romands et al\u00e9maniques<\/h2>\n\n\n\n<p>Le sp\u00e9cialiste tessinois de la branche s\u2019est en particulier r\u00e9joui des nombreuses r\u00e9actions en provenance de Suisse romande et de Suisse al\u00e9manique apr\u00e8s avoir remport\u00e9 la couronne boulang\u00e8re. \u00ab Ce ne sont pas seulement des petites exploitations qui m\u2019ont inscrit, mais aussi des repr\u00e9sentants de grandes exploitations de notre branche ! \u00bb Les clients de <a href=\"https:\/\/labottegadelfornaio.ch\/index.php\/it\/\" target=\"_blank\" rel=\"noreferrer noopener\">La Bottega del Fornaio<\/a> se sont \u00e9galement r\u00e9jouis avec lui et l\u2019ont f\u00e9licit\u00e9 pour son titre, ce que l\u2019on ne peut pas dire de ses coll\u00e8gues tessinois.<br>Le fait qu\u2019il ait cr\u00e9\u00e9 la Coupe du monde de panettone (CMP) est la raison pour laquelle il a remport\u00e9 la couronne boulang\u00e8re en 2023. Fin novembre, les \u00e9liminatoires suisses pour la finale de 2024 \u00e0 Milan (I) ont eu lieu \u00e0 Zurich. Jamais autant de participants de Suisse al\u00e9manique et de Suisse romande n\u2019avaient particip\u00e9. \u00ab Seule la comp\u00e9tition permet d\u2019\u00e9voluer \u00bb, souligne Mastropiff. Il a organis\u00e9 un cours de panettone \u00e0 l\u2019Ecole professionnelle Richemont \u00e0 Lucerne et \u00e0 Yverdon-les-Bains (VD) avec Daniel K\u00fchle et Carlos Mariel, o\u00f9 il a pr\u00e9sent\u00e9 son panettone au chocolat prim\u00e9 par l\u2019Apei.<br>Parmi les participants figurait d\u2019ailleurs un nomin\u00e9 pour la couronne boulang\u00e8re 2023 : Patrik Bohnenblust (Bread \u00e0 porter \u00e0 Berne). Ce dernier s\u2019\u00e9tait alors r\u00e9joui de pouvoir monter sur sc\u00e8ne avec Mastropiff en tant que finaliste. Giuseppe Piffaretti l\u2019a invit\u00e9 au Tessin au \u00ab Corso sui grandi lievitati \u00bb (cours sur les levains).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-conseils-aux-collegues\">Conseils aux coll\u00e8gues<\/h2>\n\n\n\n<p>Ses coll\u00e8gues de la branche en dehors du Tessin le contactent r\u00e9guli\u00e8rement, raconte Mastropiff. Pourrait-il envoyer un \u00ab lievito madre \u00bb (levain-m\u00e8re) ? O\u00f9 trouver des ingr\u00e9dients de haute qualit\u00e9 pour un panettone ? Comment se d\u00e9roule le processus de cuisson ? Giuseppe Piffaretti r\u00e9pond volontiers \u00e0 ces questions. Son objectif est de faire conna\u00eetre le panettone non seulement en Suisse, mais dans le monde entier. C\u2019est ce que nous voulons savoir de la part du professionnel, qui s\u2019extasie imm\u00e9diatement. Il s\u2019agit d\u2019une grande magie, commence-t-il par d\u00e9crire. Chaque fois que le levain-m\u00e8re est m\u00e9lang\u00e9 \u00e0 l\u2019eau et \u00e0 la farine, des merveilles naissent et se transmettent \u00e0 l\u2019humeur du producteur : lorsque le panettone sort parfaitement du four, la journ\u00e9e, aussi p\u00e9nible soit-elle, est oubli\u00e9e. Mastropiff compare cela \u00e0 un artiste sous le chapiteau d\u2019un cirque qui montre ses prouesses au trap\u00e8ze sans filet. Mais la magie ne suffit pas pour obtenir un panettone parfait. Il faut beaucoup de savoir-faire, d\u2019exp\u00e9rience et d\u2019entra\u00eenement, ajoute Giuseppe Piffaretti.<\/p>\n\n\n\n<p><em>\u2026 Lisez l\u2019article complet dans \u00abPanissimo\u00bb du 12 janvier 2024<\/em><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-giuseppe-piffaretti\"><strong>Giuseppe Piffaretti<\/strong><\/h2>\n\n\n\n<p>Giuseppe Piffaretti (64 ans) a carr\u00e9ment interrompu ses \u00e9tudes pour se lancer dans le monde de la p\u00e2tisserie. \u00c0 17 ans, il d\u00e9couvre pour la premi\u00e8re fois la p\u00e2te au levain et a un gros coup de c\u0153ur. Tout juste \u00e2g\u00e9 de 22 ans, il ouvre sa boulangerie-p\u00e2tisserie \u00e0 Mendrisio (TI). Depuis, 40 ans se sont \u00e9coul\u00e9s et il travaille aujourd\u2019hui avec quatre diff\u00e9rents types de p\u00e2tes au levain.<\/p>\n\n\n\n<p>Ce sp\u00e9cialiste tessinois de la branche a collabor\u00e9 avec plusieurs \u00e9coles professionnelles renomm\u00e9es en Suisse, en Italie, en Espagne, en France, au Portugal, en Su\u00e8de et aux \u00c9tats-Unis. Depuis 2000, il est conseiller professionnel de l\u2019association cantonale tessinoise SMPPC. En 2003, il a \u00e9t\u00e9 nomm\u00e9 \u00abCavaliere del buon pane della Confraternita ticinese\u00bb et, depuis 2017, il y officie comme Gran Maestro.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-les-distinctions\"><strong>Les distinctions<\/strong><\/h3>\n\n\n\n<p>Giuseppe Piffaretti a remport\u00e9 plusieurs prix pour ses produits au levain, dont deux fois le premio Mario Turuani, le prix Apei pour le meilleur Panettone au chocolat et le prix du meilleur Panettone tradizionale Art &amp; Pastry. Par ailleurs, il a particip\u00e9 \u00e0 divers concours internationaux en tant que repr\u00e9sentant de la Suisse, notamment \u00e0 la Coupe du monde de la p\u00e2tisserie Sirha \u00e0 Lyon (F) en 2015, o\u00f9 il a obtenu la deuxi\u00e8me place avec son g\u00e2teau glac\u00e9. Lors de la cinqui\u00e8me \u00e9dition de la Coppa del Mondo della Gelateria Sigep \u00e0 Rimini (I), il a \u00e9t\u00e9 vice-champion en 2010 et a remport\u00e9 deux fois la m\u00e9daille de bronze, notamment en 2008 et 2012.<\/p>\n\n\n\n<p>En 2023, Giuseppe Piffaretti a re\u00e7u diverses distinctions: le prix Apei d\u2019Iginio Massari pour le meilleur Panettone au chocolat; le M\u00e9rite culinaire, remis par le conseiller f\u00e9d\u00e9ral Guy Parmelin &#8211; avec le chocolatier valaisan David Pasquier, premier p\u00e2tissier suisse; la couronne boulang\u00e8re 2023 &#8211; premier Tessinois \u00e0 porter ce titre.<\/p>\n\n\n\n<p>Giuseppe Piffaretti est responsable de la marque Marchio di qualit\u00e0 per il Panettone artigianale nella Svizzera italiana, membre du Club Richemont Suisse et de la nouvelle association des p\u00e2tissiers italiens Apei. En 2018, Giuseppe Piffaretti a lanc\u00e9 avec succ\u00e8s la Coupe du monde du Panettone (Coppa del Mondo del Panettone).<\/p>\n\n\n\n<p class=\"has-text-align-right\"><em>Claudia Vernocchi en
