Le Tessinois r\u00eavait d&#8217;un deuxi\u00e8me apprentissage de p\u00e2tissier. Pendant cette formation, il a d\u00e9montr\u00e9 son savoir-faire lors de la finale du Brotchef 2021. Au terme de la comp\u00e9tition, il s&#8217;est r\u00e9joui de sa deuxi\u00e8me place.<\/strong><\/p>\n\n\n\n<p>Je m&#8217;appelle Lorenzo Gabaglio, j&#8217;ai 19 ans, je suis n\u00e9 et j&#8217;ai grandi dans le district de Mendrisio, dans le canton du Tessin. Apr\u00e8s l&#8217;\u00e9cole secondaire, j&#8217;ai fait un apprentissage de trois ans comme cuisinier CFC \u00e0 l&#8217;h\u00f4pital r\u00e9gional de Mendrisio. Je l&#8217;ai termin\u00e9 avec succ\u00e8s en juillet 2019.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-deuxieme-duyoung-talent-escoffier\">Deuxi\u00e8me duYoung Talent Escoffier<\/h2>\n\n\n\n<p>Au d\u00e9but de ma deuxi\u00e8me ann\u00e9e d&#8217;apprentissage de cuisinier, j&#8217;ai \u00e9t\u00e9 s\u00e9lectionn\u00e9 par l&#8217;\u00e9cole professionnelle de Trevano (TI) pour me pr\u00e9senter \u00e0 la finale du concours des jeunes cuisiniers Young Talent Escoffier. En tenant compte des directives strictes du concours, j&#8217;ai entrepris les pr\u00e9paratifs n\u00e9cessaires avec mon formateur Luca Spagnoli. Et effectivement ! Quelques semaines plus tard, j&#8217;ai \u00e9t\u00e9 s\u00e9lectionn\u00e9 pour la finale, avec cinq autres jeunes talents. Le 10 novembre 2018 \u00e0 Weggis (LU), le jour de la finale a \u00e9t\u00e9 tr\u00e8s \u00e9prouvant. Il m&#8217;a caus\u00e9 quelques soucis et m&#8217;a procur\u00e9 beaucoup d&#8217;\u00e9motions. Mes efforts ont cependant \u00e9t\u00e9 r\u00e9compens\u00e9s. J&#8217;ai r\u00e9ussi \u00e0 me hisser \u00e0 la deuxi\u00e8me place ; bien que plus jeune candidat, \u00e0 16 ans.<\/p>\n\n\n\n<p>Pendant mes trois ann\u00e9es d&#8217;apprentissage, j&#8217;ai toujours maintenu un niveau \u00e9lev\u00e9 sur le plan professionnel et scolaire. Gr\u00e2ce \u00e0 un travail acharn\u00e9, j&#8217;ai fait valoir cette performance lors des examens pratiques. Avec une cuisini\u00e8re, j&#8217;ai obtenu le meilleur dipl\u00f4me de fin d&#8217;apprentissage de l&#8217;ann\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-deuxieme-formation\">Deuxi\u00e8me formation<\/h2>\n\n\n\n<p>Apr\u00e8s ma formation de cuisinier, je r\u00eavais de commencer un deuxi\u00e8me apprentissage de p\u00e2tissier dans une p\u00e2tisserie renomm\u00e9e. En ao\u00fbt, apr\u00e8s de nombreuses demandes t\u00e9l\u00e9phoniques, des candidatures envoy\u00e9es et des journ\u00e9es d&#8217;essai effectu\u00e9es, j&#8217;ai d\u00e9but\u00e9 mon apprentissage de p\u00e2tissier \u00e0 la Pasticceria Marnin de Locarno (TI) ; o\u00f9 je travaille encore.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-brotchef-2021\">Brotchef 2021<\/h2>\n\n\n\n<p>Fin mai de l&#8217;ann\u00e9e derni\u00e8re, j&#8217;ai eu la possibilit\u00e9 de participer au concours Brotchef 2021. Cette comp\u00e9tition s&#8217;adresse en premier lieu aux futurs boulangers-p\u00e2tissiers, mais en tant que p\u00e2tissier-confiseur, je ne me suis pas laiss\u00e9 intimider. J&#8217;ai saisi l&#8217;opportunit\u00e9 d&#8217;acqu\u00e9rir cette nouvelle exp\u00e9rience fantastique.<\/p>\n\n\n\n<p>Avec l&#8217;aide de mon entreprise d&#8217;apprentissage et de ma formatrice Naomi Antognini, nous avons cr\u00e9\u00e9 diff\u00e9rents produits sur le th\u00e8me du Gruy\u00e8re et soumis le dossier. Parmi 20 candidatures de tout le pays, j\u2019ai \u00e9t\u00e9 s\u00e9lectionn\u00e9 en compagnie de deux autres candidats pour participer \u00e0 la finale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-a-nouveau-sur-les-trois-marches\">A nouveau sur les trois marches<\/h2>\n\n\n\n<p>La finale a eu lieu le 13 novembre \u00e0 l&#8217;\u00e9cole professionnelle d&#8217;Aarau. Face aux visiteurs et devant la cam\u00e9ra, j&#8217;ai d\u00e9montr\u00e9 mes comp\u00e9tences aussi bien de p\u00e2tissier que de cuisinier. J&#8217;ai con\u00e7u une belle table de pr\u00e9sentation, avec une d\u00e9coration r\u00e9alis\u00e9e sur le th\u00e8me du Gruy\u00e8re.
