{"id":73145,"date":"2023-12-07T07:38:02","date_gmt":"2023-12-07T06:38:02","guid":{"rendered":"https:\/\/swissbaker.ch\/?p=73145"},"modified":"2023-12-08T16:00:51","modified_gmt":"2023-12-08T15:00:51","slug":"quelle-passion","status":"publish","type":"post","link":"https:\/\/swissbaker.ch\/fr\/panissimo-news\/quelle-passion\/","title":{"rendered":"Quelle passion\u2009!"},"content":{"rendered":"\n<p><strong>No\u00ebl approche et les artisans boulangers-confiseurs tessinois s\u2019affairent \u00e0 la production de panettone,<br>un produit qui a toujours \u00e9t\u00e9 tr\u00e8s important pour les entreprises du canton.<\/strong><\/p>\n\n\n\n<p>C\u2019est pr\u00e9cis\u00e9ment pour cette raison que l\u2019association cantonale tessinoise a d\u00e9cid\u00e9 de cr\u00e9er un label de qualit\u00e9 comprenant des param\u00e8tres minimaux obligatoires (consultables sur smppc.ch), tels que l\u2019utilisation de beurre uniquement \u2013 toute autre mati\u00e8re grasse \u00e9tant exclue \u2013, de levure m\u00e8re (et non de levain), d\u2019une quantit\u00e9 minimale de fruits confits et de raisins secs, ou l\u2019interdiction d\u2019utiliser des conservateurs notamment.<\/p>\n\n\n\n<p>Chaque ann\u00e9e, en novembre, les panettones sont \u00e9valu\u00e9s par un jury compos\u00e9 de sp\u00e9cialistes du secteur et de tiers, dont des \u0153nologues, des cuisiniers et des consommateurs et consommatrices, dans le but de confirmer le label.<\/p>\n\n\n\n<p>Plusieurs cours de remise \u00e0 niveau ont \u00e9t\u00e9 organis\u00e9s au cours des 24 ann\u00e9es d\u2019existence du label de qualit\u00e9, et nous avons \u00e0 chaque fois pu \u00e9changer des informations entre coll\u00e8gues. Cela a permis de maintenir un niveaude qualit\u00e9 \u00e9lev\u00e9, de rester en phase avec le temps, et d\u2019obtenir d\u2019excellents r\u00e9sultats lors de la Coupe du monde de panettone, \u00e0 l\u2019occasion de laquelle les Tessinois se distinguent toujours du reste du monde.<\/p>\n\n\n\n<p>Le panettone est un produit \u00e9galement tr\u00e8s appr\u00e9ci\u00e9 en Suisse al\u00e9manique et romande. La demande est en constante augmentation, tant au niveau de la client\u00e8le priv\u00e9e que de la revente dans les boulangeries-confiseries, qui disposent ainsi dans leur assortiment d\u2019un produit facile \u00e0 exp\u00e9dier qui se conserve au moins un mois.
