Les d\u00e9l\u00e9gu\u00e9s ont confirm\u00e9 le comit\u00e9 in globo. L&#8217;Association suisse des patrons boulangers-confiseurs (BCS) est repr\u00e9sent\u00e9e au sein du comit\u00e9 par son directeur Urs Wellauer-Boschung.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-une-communication-plus-affirmee\"><strong>Une communication plus affirm\u00e9e<\/strong><\/h2>\n\n\n\n<p>Dans son discours de bienvenue, Lorenz Hirt a soulign\u00e9 l&#8217;excellent partenariat entre les acteurs du secteur. De nombreux sujets pr\u00e9occupent swiss granum. Hirt a notamment cit\u00e9 les trajectoires de r\u00e9duction des engrais et des produits phytosanitaires, le gaspillage alimentaire, le manque de personnel qualifi\u00e9, la crise \u00e9nerg\u00e9tique et les cons\u00e9quences des caprices de la m\u00e9t\u00e9o. \u00abNous prenons ces d\u00e9fis au s\u00e9rieux et nous y attelons!\u00bb Mais en fin de compte, il faudrait que les consommateurs et consommatrices soient pr\u00eats \u00e0 payer de mani\u00e8re \u00e9quitable les \u00e9ventuels surco\u00fbts des produits fabriqu\u00e9s selon les normes suisses. Pour atteindre cet objectif, il faut une meilleure communication, plus affirm\u00e9e. En termes de quantit\u00e9, le bl\u00e9 panifiable, l&#8217;orge et le colza ont enregistr\u00e9 un recul d&#8217;environ 10&nbsp;% par rapport \u00e0 l&#8217;ann\u00e9e pr\u00e9c\u00e9dente. Pour l&#8217;\u00e9peautre et le seigle, c&#8217;est l&#8217;inverse qui s&#8217;est produit. Le directeur de swiss granum, Stephan Scheuner, attribue cela principalement \u00e0 l&#8217;extension des surfaces. Pour ce qui est des c\u00e9r\u00e9ales panifiables, seules de faibles quantit\u00e9s ont d\u00fb \u00eatre \u00e9coul\u00e9es dans le secteur fourrager. La qualit\u00e9 de la r\u00e9colte peut \u00eatre qualifi\u00e9e de bonne, a soulign\u00e9 Scheuner.<\/p>\n\n\n\n<p><a href=\"https:\/\/swissbaker.ch\/fr\/panissimo-news\/apercu-de-la-qualite-de-la-recolte-de-ble-panifiable-2023\/\"><strong>Les r\u00e9sultats de qualit\u00e9 de swiss granum<\/strong><\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-marque-pain-suisse\"><strong>La marque Pain suisse<\/strong><\/h2>\n\n\n\n<p>Selon Stephan Scheuner, les chiffres concernant les produits de boulangerie et de p\u00e2tisserie continuent d&#8217;augmenter. Mais il est d\u00e9sormais possible de lutter activement contre ce ph\u00e9nom\u00e8ne. Outre l&#8217;obligation de d\u00e9clarer le pays d&#8217;origine des pains et produits de boulangerie dans la vente au d\u00e9tail, qui devrait entrer en vigueur en f\u00e9vrier 2024, Stephan Scheuner a \u00e9voqu\u00e9 la marque Pain suisse. Cette derni\u00e8re permettant \u00e0 l&#8217;ensemble du secteur de mettre en \u00e9vidence la valeur ajout\u00e9e de la production et de la transformation locales jusqu&#8217;au point de vente, l\u2019association Pain suisse a d\u00e9cid\u00e9 d&#8217;\u00e9largir sa gamme de produits. Les r\u00e9glementations s\u2019apparenteront d\u00e9sormais aux dispositions l\u00e9gales en mati\u00e8re de d\u00e9claration d\u2019origine&nbsp;, tant le pain que les produits de boulangerie \u00e9tant concern\u00e9s. Stephan Scheuner a soulign\u00e9 que la responsabilit\u00e9 d\u2019une d\u00e9claration correcte incombait toujours aux partenaires du march\u00e9.
