Une focalisation sur la rentabilit\u00e9 et une excellente planification ont permis \u00e0 une boulangerie innovante et moderne de voir le jour.\u2002<\/strong><\/p>\n\n\n\n<p>Richard Kuhn, repr\u00e9sentant de la cinqui\u00e8me g\u00e9n\u00e9ration, a repris en 2007 la boulangerie Kuhn \u00e0 Brunnadern (SG). Le nouveau concept Kuhn de boulangerie et de restauration a \u00e9t\u00e9 mis en \u0153uvre avec succ\u00e8s \u00e0 cette \u00e9poque, en mettant l\u2019accent sur la boulangerie \u2013 le caf\u00e9 et la restauration compl\u00e9tant l\u2019offre. Parall\u00e8lement, l\u2019id\u00e9e de cr\u00e9er un nouveau site de production a commenc\u00e9 \u00e0 germer. Mais il a fallu attendre des ann\u00e9es avant que ce projet ne devienne r\u00e9alit\u00e9. Diff\u00e9rentes possibilit\u00e9s ont \u00e9t\u00e9 \u00e9tudi\u00e9es, puis \u00e9cart\u00e9es. Le nombre de points de vente, initialement de deux, est progressivement pass\u00e9 \u00e0 14 aujourd\u2019hui.<\/p>\n\n\n\n<p>Depuis 1888, la boulangerie Kuhn confectionnait nombre de ses produits \u00e0 Brunnadern, dans le Toggenburg, et ce dans un espace tr\u00e8s r\u00e9duit \u2013 le sous-sol, le rez-de-chauss\u00e9e et l\u2019\u00e9tage ne mesurant au total que quelque 700\u202fm\u00b2. Un deuxi\u00e8me site de 250\u202fm\u00b2 \u00e9tait d\u00e9di\u00e9 \u00e0 la fabrication de produits de p\u00e2tisserie notamment. Le nouveau site de production devait-il \u00eatre construit \u00e0 Brunnadern\u2009? Richard Kuhn a finalement d\u00e9cid\u00e9 que non et opt\u00e9 pour L\u00fctisburg-Station, pour \u00e9viter que les voisins ne lui mettent des b\u00e2tons dans les roues. \u00ab\u2009Nous avions satisfait \u00e0 toutes les exigences, seul l\u2019acc\u00e8s n\u2019\u00e9tait pas r\u00e9gl\u00e9. Il ne s\u2019est \u00e9coul\u00e9 que onze mois entre la d\u00e9cision et le d\u00e9but des travaux en d\u00e9cembre\u202f2021, phase de demande d\u2019autorisation comprise, la production sur le nouveau site s\u2019\u00e9tant d\u00e9j\u00e0 av\u00e9r\u00e9e op\u00e9rationnelle \u00e0 la mi-janvier 2022. <\/p>\n\n\n\n<p>\u00ab\u2009Il nous a fallu exactement un an pour la construction\u2009\u00bb, relate Richard Kuhn. \u00ab\u2009Tout le monde a travaill\u00e9 main dans la main.
