L\u2019autorisation de construire d\u00e9livr\u00e9e, le d\u00e9marrage du chantier est toutefois en attente\u00a0: son financement n\u2019est pas totalement ficel\u00e9. Avec lui, c\u2019est tout l\u2019avenir de la sp\u00e9cialit\u00e9 boulang\u00e8re du Vieux Pays qui est en suspens. Le point avec le pr\u00e9sident des boulangers-confiseurs valaisan, Albert Michellod.<\/strong><\/p>\n\n\n\n<p>A la fin de l\u2019ann\u00e9e, le Moulin du Rh\u00f4ne \u00e0 Naters devrait fermer. Ses installations sont les seules \u00e0 moudre du seigle en Valais. Or, cette farine est l\u2019un des crit\u00e8res indispensables \u00e0 l\u2019obtention du label AOP pour le pain de seigle valaisan. L\u2019exploitant actuel, le Groupe minoterie SA (GMSA), compte construire un nouveau moulin devis\u00e9 \u00e0 7 millions de francs, \u00e0 Riddes (VS)&nbsp;; la certification devrait donc \u00eatre sauve. Toutefois, GMSA ne pourrait pas absorber l\u2019int\u00e9gralit\u00e9 de l\u2019amortissement. Il souhaiterait que d\u2019autres acteurs prennent en charge une partie de ce dernier. \u00ab&nbsp;Les recherches sont pour l\u2019instant rest\u00e9es vaines&nbsp;\u00bb, selon le communiqu\u00e9 de presse de l\u2019Association du pain de seigle.<\/p>\n\n\n\n<p><strong>Albert Michellod, l\u2019avenir du Pain de seigle valaisan AOP est intimement li\u00e9 \u00e0 la construction du moulin de Riddes. Qu\u2019en est-il?<\/strong><br>Nous sommes en pleine discussion. Avec le milieu politique, le service cantonal de l\u2019agriculture, les boulangers et les producteurs nous avons cr\u00e9\u00e9 une task-force. Nous nous r\u00e9unirons le 19 juin afin de voir si nous sommes en mesure de trouver une proposition \u00e0 faire \u00e0 GMSA.<\/p>\n\n\n\n<p><strong>Quelles solutions voyez-vous\u00a0?<\/strong><br>Un arrangement financier pourrait \u00eatre trouv\u00e9 avec l\u2019Etat du Valais\u00a0; cela pourrait passer par l\u2019acquisition du terrain et du b\u00e2timent, par exemple. Une autre possibilit\u00e9 serait que GMSA prenne tout \u00e0 sa charge. Si le projet est abandonn\u00e9, l\u2019ultime solution serait de se tourner vers les petits moulins. L\u2019un d\u2019entre eux pourrait peut-\u00eatre se d\u00e9velopper pour fournir les 500-600 tonnes de farines n\u00e9cessaires.<\/p>\n\n\n\n<p><strong>Et que se passerait-il si aucune ne fonctionne\u00a0?<\/strong><br>Je vais \u00eatre cru, mais le pain de seigle AOP est mort\u00a0!<\/p>\n\n\n\n<p><strong>Quelle en seraient les r\u00e9percussions\u00a0pour la branche ?<\/strong><br>Nous perdrions la certification et vendrions sous le nom pain de seigle valaisan. Les grandes surfaces, qui repr\u00e9sentent un tiers des ventes je pense, pourront se fournir et produire en dehors du canton. Ce serait catastrophique au niveau marketing\u00a0et une grosse perte en termes d\u2019image ! C\u2019est un produit embl\u00e9matique qui fait partie de la promotion des produits valaisans.
