L\u2019Association suisse des patrons boulangers-confiseurs (BCS) et l\u2019Union suisse de la levure (SHV) ont, le 13 juin 2023, d\u00e9cern\u00e9 pour la onzi\u00e8me fois d\u00e9j\u00e0 le prix cr\u00e9\u00e9 par cette derni\u00e8re. Sa p\u00e2tisserie-confiserie \u00abLa Bottega del Fornaio\u00bb \u00e0 Mendrisio attire de nombreux gourmets d&#8217;ici et d&#8217;ailleurs. La possibilit\u00e9 de stocker l&#8217;\u00e9nergie exc\u00e9dentaire sous forme d&#8217;hydrog\u00e8ne est actuellement \u00e0 l&#8217;\u00e9tude. Ce professionnel du pain imagine constamment de nouvelles innovations qui attirent l&#8217;attention de la client\u00e8le et des m\u00e9dias (dont un pain au gin, avec du marc de gin provenant d&#8217;une distillerie locale). Il confectionne ses produits dans le seul fournil subsistant dans la vieille ville de Berne, et fait d\u00e9couvrir aux profanes les subtilit\u00e9s et les avantages du levain avec beaucoup de passion. Suisse SA), Silvan Hotz (pr\u00e9sident de la BCS), Urs Wellauer-Boschung (directeur de la BCS) et Lisa Frunz (membre du comit\u00e9 central de la BCS) \u2013 s\u2019est rendue dans les entreprises pr\u00e9s\u00e9lectionn\u00e9es en vue de les \u00e9valuer.<\/p>\n\n\n\n<p>La SHV et la BCS f\u00e9licitent tous les nomin\u00e9s, ainsi que le laur\u00e9at de la \u00abcouronne boulang\u00e8re
