Chaque produit est unique\u2009; c\u2019est la cl\u00e9 du succ\u00e8s depuis 75\u202fans.<\/strong><\/p>\n\n\n\n<p>Richard Majeux d\u00e9pose une plaque de beurre sur la p\u00e2te abaiss\u00e9e. Et commence \u00e0 tourer\u2009: il abaisse la p\u00e2te au beurre, la plie, recommence. Apr\u00e8s avoir d\u00e9coup\u00e9 la p\u00e2te feuillet\u00e9e en triangles, le chef de production de la boulangerie-p\u00e2tisserie-confiserie Suard les roule d\u2019un geste dynamique et pr\u00e9cis pour former des croissants. Vingt\u202fminutes au four, un temps de refroidissement, et les croissants sont pr\u00eats. Faits main de A \u00e0 Z. Chaque p\u00e2tisserie ou viennoiserie est unique\u2009; ce que remarque la client\u00e8le, non sans manifester son \u00e9tonnement, raconte la directrice Laurence Stephan. Et d\u2019en conclure\u2009: \u00ab\u2009Visiblement, l\u2019artisanat est bien plus souvent l\u2019exception que la r\u00e8gle, dans bien des endroits\u2009\u00bb.<\/p>\n\n\n\n<figure class=\"wp-block-pullquote has-text-color has-large-font-size\" style=\"color:#cc9933;font-style:normal;font-weight:600\"><blockquote><p>\u00ab\u2009Nous avons la taille id\u00e9ale pour \u00e9couler nos produits dans la ville et l\u2019agglom\u00e9ration fribourgeoises.\u2009\u00bb<\/p><cite>Laurence Stephan<\/cite><\/blockquote><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-l-amour-du-travail-a-la-main\">L\u2019amour du travail \u00e0 la main<\/h2>\n\n\n\n<p>Chez Suard, l\u2019artisanat est la cl\u00e9 du succ\u00e8s. Depuis 75 ans, la c\u00e9l\u00e8bre boulangerie de la ville produit presque exclusivement \u00e0 la main. Tout a commenc\u00e9 par une petite boulangerie dans le quartier d\u2019Alt. Aujourd\u2019hui, l\u2019entreprise familiale s\u2019est transform\u00e9e en une PME comptant six filiales et 120 collaborateurs. \u00ab\u2009Nous avons la taille id\u00e9ale pour \u00e9couler nos produits dans la ville et l\u2019agglom\u00e9ration fribourgeoises.\u2009\u00bb Pour la directrice, une chose est claire\u2009: \u00ab\u2009Nous ne voulons pas grandir davantage\u2009\u00bb. L\u2019accent est mis sur le perfectionnement des recettes et de l\u2019offre. \u00ab\u2009Nous souhaitons rester une entreprise artisanale et voyons l\u2019avenir sans transformation industrielle.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Mati\u00e8res premi\u00e8res de la r\u00e9gion<\/h2>\n\n\n\n<p>Mais pas de production artisanale sans mati\u00e8res premi\u00e8res\u2009! Suard s\u2019approvisionne en lait, en farine et en beurre \u00e0 Fribourg principalement. Le sucre vient d\u2019Aarberg (BE). \u00ab\u2009Le lait et le beurre nous sont livr\u00e9s par un ami, dont la laiterie se trouve \u00e0 vingt petites minutes de voiture\u2009\u00bb, explique le chef de production. Cette proximit\u00e9 est essentielle pour l\u2019entreprise. Car pour apposer le label \u00ab\u2009Terroir Fribourg\u2009\u00bb sur ses produits, elle doit obligatoirement travailler avec des mati\u00e8res premi\u00e8res de la r\u00e9gion. La certification garantit des standards \u00e9lev\u00e9s et constitue un gage de qualit\u00e9 suppl\u00e9mentaire des produits Suard. Et puis, l\u2019agriculture locale en profite aussi. La boulangerie est tr\u00e8s fi\u00e8re de sa Cuchaule AOP. Pour rendre son activit\u00e9 plus respectueuse de l\u2019environnement, elle a banni le plastique des emballages. En outre, Suard s\u2019associe \u00e0 des agriculteurs pour donner les restes de pain aux animaux au lieu de les jeter.<\/p>\n\n\n\n<p>Suard explore aussi de nouvelles voies num\u00e9riques. La directrice illustre ce point par le service de livraison \u00ab\u2009LocalOnly\u2009\u00bb de la Poste\u2009: \u00ab\u2009Les clients peuvent commander nos pains en ligne. Ainsi, ils trouvent leur petit-d\u00e9jeuner livr\u00e9 dans la bo\u00eete aux lettres avec le journal. Et ce, sans \u00e9missions suppl\u00e9mentaires, gr\u00e2ce \u00e0 la Poste\u2009\u00bb.
